Flatlander Chili
Delicious chili and so comforting on a chilly night! Very easy to make too. I have made this chili many times using different canned tomato variations, and bell pepper and bean varieties and it has always turned out wonderful. It's easy to tweak to suit your taste. I like to use 2 bell peppers, 2 cans beans, and celery with the leaves. The longer you let it simmer the better, the flavors really get to meld together. Serve with some sharp cheddar and monterey jack, green onion, olives, and sliced avocado-warm cornbread too!

Pollo Fajitas
The ingredients for this recipe seem odd for fajitas, but the chicken is outstanding. I have used this recipe 3 times and the entire family loves it. I do not add the hot sauce, we don't have any, and I double the garlic, we love garlic. I am doing a low carb diet, so I top a salad with the chicken and use tomato salsa as the dressing. It is full of flavor and very yummy. Greate recipe!

Lower Fat Banana Bread I
Great banana bread. I substituted apple sauce for the margarine. It was so moist and so full of flavor. I couldn't believe it. You can add anything to this bread. Chocolate chips, coconut, dried fruit, grated zucchini, cinnamon/nutmeg, walnuts. The list can go on and on. This is my new banana bread recipe. Thanks.
