Chili I

I have only tried making chili a few times, thinking it was a mysteriously cultural sort of dish. I followed this recipe to the tee (sort of), and it was AMAZING! I didn't have enough chili powder so I used a little chipotle. We had the kids come over and they took all of the leftovers. I didn't use any ground beef, substituting sirloin tips instead. This is without a doubt the best chili I ever ate, and I'm not just saying that because I made it. The only thing missing was cornbread. This is a keeper!

Roast Beef Tenderloin

I made this for our Christmas Eve meal. I followed the recipe exactly, except I made more sauce than the recipe called for. My son-in-law started to calculate how much we could sell this meal for! It was awesome. I substituted regular mushrooms for the porcini mushrooms. I also added Gravy Master to darken the sauce. This was without a doubt one of the best meals I have ever made. I used Chef John's mashed potato recipe, and served it with baked Brussel sprouts. Thank you Chef John, you continue to amaze me and my family with your excellent recipes!

Mexican Brownies

My grandkids loved these brownies. I made a batch for Cinco de Mayo and they were a hit. For some reason mine always come out like cake. Perhaps I need to reduce the amount of eggs.

Chef John's Beef Goulash

WOW! Another keeper from Chef John. This is so tasty. I followed the recipe exactly, however I didn't have Hungarian Paprika so I had to use the paprika I had. Great comfort food. We had this with egg noodles, and the leftovers were even better! Thanks again for another HIT Chef John.

Kung Wow Chicken

This is one of the most complex recipes I have attempted. Lots of steps with many ingredients! This is a keeper! My wife had seconds, a very rare occurrence in our home. Chef John's recipes are always primo! Only suggestion, double the recipe, it doesn't last long!

Pears Panos

I was so anxious to try this recipe on my wife's relatives that I forgot to read the entire recipe. I didn't halve or core the pears. I removed the pears and placed them in a bowl while I finished the sauce. When it was time for dessert I place each pear in the center of the place, ringed the plate with a little sauce, and added a small scoop of vanilla ice cream. The comments were unexpected! "Oh wow, pears." And the compliments wouldn't stop either. We're still getting Facebook comments as well. This is a keeper!

Classic Meatloaf

Amazing! I am a meatloaf lover and I have been reluctant to deviate from the recipe on the back of the bread crumb box, however this is the new standard. I love the fact it has lots of veggies, which makes my wife very happy. This is truly classic meatloaf. I made Chef John's German potato pancakes, which was a first because I always make mashed potatoes with the meatloaf. Another "crowd pleaser" to say the least. This website has done more for my eating habits than any other website or magazine. I am pleased with the quality of the recipes, especially Chef John's offerings. As for cooking times, I did have to increase the oven temperature to 350 degrees because it wasn't cooking fast enough. I also cut the recipe in half but I will make two meatloaves with the original recipe next time.

Butternut Squash Bisque

I've recently started enjoying bisque, especially butternut squash, at restaurants. This was my first attempt and it was without a doubt the best I have ever had! So easy, so creamy, so flavorful! Like a fine wine, there were layers of flavor, especially the onion. I have so many new favorites because of this website and this is definitely one of them!

Chicken Marsala

I substituted chicken tenders, which worked out well. My wife's comment was "great", and she doesn't do superlatives often. She even asked how I got the sauce to come out brown, tan actually. I assume it was from the mushrooms. The sauce was so smooth, not to sweet, and very flavorful. I wish I had used more marsala wine, I think it was lacking the marsala flavor I was expecting. This recipe's a keeper!

Beef Medallions with Caramelized Pan Sauce

I don't know what I did wrong. Mine didn't look like Chef John's. I won't rate this because I think I deserve all of the blame. It wasn't a failure, just a lot of work for beef tenderloins, which we have all the time. Chef John is the best...his recipes are reliable, all of the time, which is why I think I fouled this one up! Since this website demands that I rate the recipe in order to post, I will.

Meatball Nirvana

Very good, well worth the effort! I have tried several meatball recipes and this one is at the top. My mother was the meatball maker in the family, and I never got the recipe. Now I have a recipe I am proud to serve.

World's Best Pasta Sauce!

I made a double batch of this sauce so I could share it with others. It was FANTASTIC, to say the least! I added a double batch of Chef John's meatballs, delicious. Oh yeah, I did not add the beef, only the sausage. I was tempted to go with Italian hot sausage but decided to follow the recipe and used sweet Italian sausage, which was good because we had a houseful of young kids to feed. Thanks for the great recipe! It's a keeper.
