Red Skinned Potato Salad

Yum! I made it as-is with just a few modifications. It was perfect without any changes, but I decided to experiment. My changes were a combination of potatoes (red, blue, regular/white), red onion, and adding 2 tbsp of Dijon mustard. Fantastic.

Gourmet Mushroom Risotto

Delicious! I modified this a bit because I didn't have all of the ingredients available. I used only baby portobellos, I had no white wine (used extra broth instead), and no chives. I added a little garlic and a tablespoon of balsamic vinegar. Very yummy!

Caramel Apple Pork Chops

I make both the chops and apples at the same time on the stove top. This is a very fast and delicious meal. Always comes out perfect.

Swiss Cheese Fondue

Did not have any white wine on hand so I used extra chicken broth instead. Also, I used chopped garlic and kept it in the cheese the whole time. Dee-lish!

Yummy Chocolate Peanut Butter Cookies

Apple Enchilada Dessert

This was very, very tasty! I received many compliments on it! I was a bit concerned with how it would turn out when using flour tortillas, but it was fantastic. When I made this, I cut back on the water (1/3 cup instead of 1/2), added pecans (1/2 cup or so) and additional cinnamon to spice up the apple pie filling. When it was finished baking, I cut the enchiladas in half so it served 12. The portions were perfect, not to big and not too small. I highly recommend this!
