Sloppy Joes I

Reviewed: Oct. 1, 2014
This is very similar to the recipe my mother made for all our Boy and Girl Scout events in the 1950 & 1960's. The recipe has been passed on to multiple generations. Our recipe includes chopped onion while browning beef, and using tomato soup instead of water. The tomato soup sweetens it a bid without that overpowered tomato taste. Also add a splash of Worcestershire. The regular yellow mustard is a must. Using Chicken Gumbo soup is the only way to make "joe's" in my opinion. Great on toasted buttered buns. Not sure why anyone would waste money buying the canned Sloppy Joe mix. This is so simple. A family comfort food for weekend football parties.

Stuffed Green Peppers

Reviewed: Aug. 24, 2014
This is a wonderful and simple recipe. The only addition I made was to add a small can of petite diced tomatoes to the stuffing mixture. And I only made the addition to use the can that was expiring soon. This recipe is a keeper!

Spaghetti Sauce

Reviewed: May 18, 2014
This a great basic recipe that can be altered to personal preference. I omitted the green onion and sugar. Added 1 packet of "SPLENDA" I also used a 28 oz. can of crushed tomato. Added 1 can tomato paste, mushrooms, shredded carrot, and zucchini. I also decreased seasonings, as I do not like an over bearing basil and oregano taste.

Real Welsh Rarebit

Reviewed: Feb. 6, 2013
I love this recipe, reminds me of the Welsh Rarebit my grandmother would make. I like to serve on toasted english muffin with a slice of canadian bacon and broccoli spears and cover with the Welsh Rarebit sauce.

Curried Shrimp Au Gratin

Reviewed: Dec. 24, 2012
My family loved this curried shrimp recipe. I also made revisions, The sauce was too bland, so I doubled the curry and added some ground red pepper. Instead of layering as indicated in recipe, I added cream sauce to the shrimp in the casserole dish, and then stirred the rice into the casserole. Grated the cheese and added on top with paprika before baking. Made it for Christmas Eve late lunch with salad and fresh baked bread. I have been told that this is now a required holiday recipe! No leftovers!
