Delightful Indian Coconut Vegetarian Curry in the Slow Cooker
In this recipe I replaced the potatoes with one large yam. After having read others' alterations, I added a can of chickpeas, chopped onion and vegi broth instead of onion soup mix, coconut milk instead of cream, 3 cloves of garlic, salt & pepper. I also added a pound of vegi ground 'meat', which I had briefly fried and spiced up with a bit of chili powder and salt, chopped almonds, and a handful chopped raisins, and topped it all with lots of chopped parsley at the very end because I don't like cilantro. I used less chili and more good indian curry powder. Other than sauteeing the onions, garlic and ginger, everything went directly into the slow cooker. Served over white rice. Very good, --- and healthy!

Coconut Curry Fish
It tasted amazing.. I added a splash of maple syrup and it was really good. I wonder if one could add mango chutney, raisins or something very subtle. I will try that next time. By the way, cod fillets worked very well in this recipe.

Moist and Chewy Peanut Butter Cookies
Great recipe! I made a few adjustments that will please the health-conscious. And the cookies turned out perfect! I used 1/4 cup butter instead of 1/2 margarine; a bit more peanut butter than called for, no white sugar at all, only the 3/4 cup brown sugar. I only needed 3/4 to 1 cup tops of flour, and added vanilla. I did not chill the dough either but rolled it into balls, flattened them with fork, baked them 9 minutes at 330-350, and they came out tasting and looking awesome, chewy and not flat. Made 33 smallish cookies. Love them! Thanks...
