Sweet Corn Bread

These turned out SOOOOOOOO good!! Really moist and just enough corn flavor! I added a slight bit more sugar because I like sweet corn bread and made them into muffins - amazing!!

Sun-Dried Tomato Basil Orzo

This recipe tasted nice. I made a few changes, including boiling the orzo in vegetable stock to give it extra flavor and adding feta instead of parmesan cheese to give it a more Greek taste. I also added pine nuts to give it a bit of a crunch!

Ricotta Cookies III

I made one half of the batter into cookies and realized that they take more like bread. So, I put the other half in a bread pan to bake. When I brought the bread to an office party, people loved it, especially with a bit of lemon extract to give it a citrusy flavor!

Marinated Tuna Steak

Artichoke Chicken

The Best Vegetarian Chili in the World

Awesome chili! I tried it twice - once with the corn and once without. I personally preferred it without the corn (added too much crunch and detracted from the beans and vegan beef crumbles). This recipe works really well for leftovers!

Pumpkin Ravioli with Hazelnut Cream Sauce

Arrabbiata Sauce

I LOVE this sauce! This was the first time for me to make pasta sauce, so I followed the directions really carefully. The proportion of all the ingredients was perfect (I am always unsure about the quantity of garlic and onion to add) and the wine gave it such a nice blend! I added a little more crushed red pepper than the recipe called for (about 1.5 tablespoons) because my boyfriend and I like spicy sauce, and it worked out really really well! Excellent recipe!

Broiled Herb Butter Chicken

Although I don't eat chicken, I made this as part of my Valentine dinner for my boyfriend and he loved it! I marinated the chicken for a few hours in Italian dressing first, and then broiled it with the butter/herb/garlic mixture. My boyfriend said that it turned out perfectly juicy and spiced!

Carrie's Bruschetta Appetizer

Amazing! This recipe turned out wonderfully! The proportions of tomotoes to basil and garlic was perfect. Rather than heating the tomato mixture, however, I made it a few hours in advance and let it marinate in the fridge. I then just put it on top of the cream cheese/feta mix cool and it tasted rather nice in contrast to the warmth of the bread. I will DEFINITELY make this recipe again!

White Chocolate Cheesecake with White Chocolate Brandy Sauce

This cheesecake was fabulous! It turned out really light and not too sweet as I had feared. The brandy sauce on top came out a little too thin, however, so I added some more white chocolate bits. I also replaced brandy with Tia Maria liquer and it went really well with the cheesecake itself. Great recipe!!
