Kiki's Spiced Habanero Peach Jam

Well, I should have paid attention to the "spiced" part. I made this in August when the peaches were ripe and while my husband liked it, it was just too Christmassy tasting to me. Couldn't really taste the peaches at all (and they were fantastic as I peeled and nibbled). Also, the directions say to boil the pectin, add sugar, then boil again. This is the opposite of what the pectin packets say (boil sugar first then add pectin, then boil again), and processing for 15 minutes was too long even at 5,000 feet, so the result is 11 jars of peach habanero sauce. We will use it, but it isn't jellified. Oh, and one final note ... I had never handled habanero peppers before. I didn't wear gloves to de-seed them and about an hour later I scratched my eye with my fingernail. It took an hour of flushing my eyes with saline and milk before the pain went away. Totally my fault, just be careful. Holy cow that was a painful lesson to learn. I will try the recipe again but next time without as much allspice and I will follow the directions on the pectin packs so that these set and will update. Probably next year. Good luck!

High Altitude Deep Dish Brownies

I have tried umpteen brownie receipts in ABQ (at 5k feet) ... these tasted the absolute best. The middle still sunk so I'll need to figure out how to tweak it, but I'll start with these basics from now on.

Butterscotch Oatmeal

Always looking for ways to eat more oatmeal and this was great! We used 1/3 cup of the brown sugar and it was on the verge of sickening sweet though. Next time I'll use 1/4. But the flavor was awesome. The kids ate it right up! I might try Almond Milk one of these days too. Thanks for sharing!

Brown Bean Chowder

This recipe is fantastic! I'm not from Tulsa so I'd never had it before, but even my picky non-bean-eating teenager gobbled it up. My only suggestion is to add a little hot sauce to the bowl when serving. This is going into the rotation folder. Thanks!

Juicy Watermelon Sorbet

With one cup of simple syup this is easily a 5 star recipe. And so easy. I'll never throw leftover watermelon away again. Tip, go ahead and make your simple syrup as instructed, but only use 1 cup in the sorbet. Save what's left in the fridge for mojitos or whatever strikes you. We always keep some on hand.

Best Brownies

I'm having a problem with this recipe at 5,000 feet. I've made them twice. They taste great, but the middle never seems to get quite done and it's always sunken in, despite cooking longer than the directions call for. If I try this again I will add more flour and see if that helps. Also, don't skip the icing - it really makes this recipe. I added a few bits of dark chocolate, too and that adds a nice touch.

Chili Rellenos Casserole

I did not like this recipe at all. Living in NM, chili rellenos are a part of our diet, so maybe my expectations were too high. This had the texture almost like a custard. Rellenos are breaded and fried, not baked into a souffle. The flavor wasn't bad (using enchilada sauce instead of tomato sauce) but I just could not get over the mouth feel. We threw this away.

Fettuccini Alfredo I

This is good in a pinch if you don't have cream on hand. It definitely needs salt, and maybe slightly less flour. I left out the hot pepper sauce and sauted red pepper flakes with the garlic. It didn't have much pizazz so next time will use the sauce and see what happens. I also added some leftover imitation crab from sushi night and made a seafood alfredo. It was a hit

Italian Bread Using a Bread Machine

This was an excellent recipe. We are at 5k feet so we needed to add about a TBSP of extra water, but the rest of the measurements were perfect. We made garlic bread with this for dinner, then sliced the 2nd loaf for a french dip the next day. It was still moist and yummy. Def going into the rotation.

Salmon and Spinach Fettuccine

Oh this was yummy. My picky teenage daughter even gobbled it up! I made a few adjustments (baked salmon, heavy cream instead of milk, replaced half the butter with cream cheese, and sauteed the spinach with olive oil, shallots and garlic.) This really could be served in any restaurant. Next time will try it per the instructions and see which one I like better. Thanks!

Mint Jelly

I thought the taste was pretty good. Can def note the apple cider vinegar. Most people who tried it said it was "very minty" ... which I think is good but not everyone agreed. I liked it so much I'm making another batch right now! Also, this recipe makes only 3 1/2 jelly jars, not 9.

Jerky Lover's Jerky - Sweet, Hot and Spicy!

This was my first attempt at making jerky, and wow, this was great! Might have a bit more kick than my dd will like so next time I'll leave red chili flakes off half the batch. Also, you can easily double the beef and not adjust the amount of marinade. I had waaaaaaay too much when I doubled everything. Thanks!

I have to say I wasn't crazy about this dish, but in all fairness, I adjusted the recipe per some of the member reviews. The little next girl thought it was the best, so I'll have to try it again without changing anything and see how it goes.

Honey Corn Bread

This is now my favorite corn bread recipe. I added a few diced jalapenos from the garden for a sweet & spicy kick. I also cooked it in a pre-heated cast iron skillet on the grill so I didn't heat my house in the summer. It just finished about an hour ago and I've already eaten half. YUM!
