I made a few changes in lower the calories and increase the health benefits. I switched out 1/2 cup of butter for applesauce, used eight egg whites instead of 4 eggs, added 2 tablespoons of ground flax, 2 tablespoons of cocoa powder, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp ground ginger. I did not cook the yams, simply peeled and shredded them on my grater. I also did not add the glaze and they came out sweet enough! Next time I may follow another user's suggestion of adding raisins! Thank you for the fabulous recipe.
