White Cheese Chicken Lasagna
I've been using Allrecipes for a LONGGGGGG time and have never had the inclination to write a review about a recipe until I cam across this one. IT WAS AMAZING!!!! I took the time to read some of the reviews and here are the additions/substitutions that I made:
Used Fresh spinach and also added fresh finely chopped mushrooms. I sauteed the two together with a little butter and EVOO. Once those were done cooking, I added the Ricotta. I used a little more than the recipe calls for because there is no such thing as too much cheese!!!!
For the sauce mixture, I used 2 cups of milk, 2 cups of broth and more garlic than it called for. Use as much garlic as your taste buds can handle... I also followed a previous tip to finely chop your onions while you cook the sauce. I finely chopped them and it added flavor without being "too chunky" of an onion taste.
I used 2cups of 6 cheese italian mixture and 2 cups of mozzarella instead of 4 cups of mozzarella, and used more parmesan than it called for. Again, the more cheese the better!
ALSO - I used FF ricotta, low fat butter, low fat cheeses (when possible), reduced sodium chicken broth, FF milk - - - dont get me wrong, this recipe isn't "healthy" but I cut back wherever possible and it was still amazing.
I also used Tyson ready made grilled chicken strips. Heated them over the stove, then chopped them up in to small bite sized pieces and also used no boil lasagna noodles Barilla brand.
DELICIOUS & will continue to use this recipe!
