Avocado Green Goddess Dressing

Reviewed: Aug. 3, 2010
Very impressive and couldn't be simpler to make!!If you substitute nonfat yogurt for the mayonnaise you can eliminate almost all of the fat in this high-fat food while retaining the fiber, potassium, vitamin E, B-vitamins, folic acid, and other nutrients. Fage (pronounced “fa-yeh”) nonfat yogurt is very thick and creamy and will NOT interfere with other flavors. 1 tablespoon of mayo is 90 calories, 10 grams of fat, 5 mg cholesterol, multiply them by the 1 cup (which has 16 tablespoons in it) called for in the recipe and you now have 1,440 calories, 160 grams of fat, and 80 mg cholesterol!! 1 cup of fage nonfat yogurt is a Total of 120 calories, No fat, No cholesterol, and plus you get 20 grams of protein. I used the yogurt and kept the rest of recipe the same and it was delicious!! If you want to use chives in place of green onion you can, and for those of you who don’t want to deal with the messy anchovy fillets, you can use Giovanni’s anchovy paste. 1 hour of chill time was sufficient. Thank you Lisa! Your recipe is full of flavor!!

French Bread

Reviewed: Sep. 20, 2008
Very easy to make and who doesn't like hot fresh bread right out of the oven! I took the time and read most of the reviews, and based on their suggestions the bread came out perfect! So that you don't have to read them all yourself, I've combined them here: 5 cups flour instead of 6, 2(.25 oz) pkgs active dry yeast, 1 Tablespoon salt, and made the cuts in step 4 after the 3rd sentence. If you use Pure Spring Water(not to be confused with distilled water) and Fine Sea Salt(make sure it's Fine sea salt and not Coarse, and it will dissolve perfectly in your dough), it will make it even better! Kneading bread is great's a great place to take out your frustations! Don't skimp on kneading time. Set a timer if it helps. If the dough is under-kneaded, the gluten will not be developed enough to allow the dough to rise during fermentation. Yeast: 1st check the expiration date; old yeast could be dead or too lethargic. Proofing always helps. To Proof yeast: In a medium bowl combine 1/2 cup warm water (100-110 F), 2 teaspoons sugar, and the 2 pkgs of yeast this recipe calls for, let stand 10 minutes. If mixture doubles in volume, the yeast is active. This leaves you with only 1-1/2 cups water to be added to the flour. Great recipe Jenn! Thank you!!!

Crunchy Turkey Salad

Reviewed: Nov. 26, 2006
Perfect for leftover turkey! We loved its delightful crunchy texture. Only 1 celery, 1 apple, and 1 T. of lemon juice are needed...much more than that and you'll have a celery, apple, runny salad. Slice the celery thin and dice the apple. Instead of walnuts, I used sliced almonds sauteed in butter. Must be chilled for the flavors to come together.

Smothered Filet Mignon

Reviewed: May 2, 2005
Great recipe! I tried blue cheese on 2, and mozzarella on the other 2. Both tasted fabulous! The marinade really gives the filets a lot of flavor, but is not overpowering. I will use this recipe a lot this summer!

Absolute Mexican Cornbread

Reviewed: Feb. 20, 2005
Wonderful!!! All my guests loved it! I didn't change a thing. It was a little too sweet for me, so I'll adjust it down to 1/2 cup or a 1/4 cup of sugar. If you like sweet, the 1 cup of sugar will be fine. It goes great with the Chili I recipe submitted by Bob! It will certainly be made again & again!!! Thanks Judy!!

Chili I

Reviewed: Feb. 20, 2005
Rave reviews by all!!! All 6 dinner guests commented that it was the richest and the best chili they'd ever tasted! The only thing I changed was the beef sirloin...and used filet mignon instead, only because I already had it on hand and had bought it at an incredible sale at the store. Recipe is now posted on the fridge at the cabin!!!

My finicky kids loved it! The man of the house couldn't get enough! It disappeared! Does take a little extra work, it's worth every minute you put into it! I have a pasta machine and made my own lasagna sheets, doing this took this already great recipe to the top!!!

Chocolate Chocolate Chip Cookies I

Reviewed: Sep. 24, 2004
FABULOUS!! Read most of the reviews first, the good reviews were absolutely true. Any bad reviews came from those who either don't know how to bake a cookie or don't like cookies to begin with! Didn't change a thing, this recipe works and is as good as everybody says it is! Way to go Kathy Brandt!!
