Gingerbread Cupcakes with Cream Cheese Frosting
Through my search of trying to find a soft gingerbread cookie, I stumbled upon this recipe. I was skeptical, but the reviews said it was good, so I decided to try it out. This recipe tastes just like gingerbread, only soft, exactly what I was looking for.
All soft cookies had reviews about the cookie dough being crumbly, so I went with this. I made them in mini cupcake tins so I could have bite sized taste testers, and even my mother loved it, who isn't a big fan of desserts. Looking forward to sharing these with my co workers tomorrow.
