No-Cream Pasta Primavera

Very good and so easy and versatile! I had a bunch of green beans, squash and tomatoes from the garden so I just used that. I also added some shrimp that I just roasted together with the veggies. Very good as written but next time I might put, instead of the balsamic vinegar, 1/2c white wine and a bit more lemon juice for the sauce.

Quinoa with Chickpeas and Tomatoes

Really liked it. I sauteed some onions and added that, also sauteed the rest of the veggies and cooked the whole thing for a bit so it felt less like a salad. Might add some raisins next time.

Smothered Tilapia

This was quick, good, and very easy. I even used canned tomatoes, plain american cheese and bottled lemon juice because I did not have the fresh stuff on hand and it still came out tasty. Will definitely do again.

This is definitely going in my favorites, so easy, and so good! I added an onion & some garlic when browning and subbed about 1/4 of the water (I used chicken bouillon instead of broth) with white wine. I put a lot more thyme than 1/2 teaspoon, too. It was delicious.

Southern Fried Cabbage

This was very good, easy, & cheap. I followed the advice from the comments, doubled the bacon and omitted the oil, added some garlic, celery seed and a bit of cider vinegar, also had to cook it a good bit longer than indicated, maybe it's because I had a large cabbage! And I took the bacon out then added it back in at the end so it would not get soggy.

Applesauce Pork Chops

Those were awesome, and so easy! I added a little bit of apple cider vinegar (maybe about 2 tbs) to offset the sweetness in the sauce, and seasoned the chops with thyme before browning them. I did not have an apple on hand so I left that out and it was still delicious.

Broiled Parmesan-Lemon Tilapia

This was good but seasoning was a bit strong, I did not have Sazon seasoning so tried with a mix of cumin, coriander, paprika, garlic powder, salt and pepper, as recommended in one of the reviews. Next time I might just use lemon pepper. My girlfriend really loved it though but she is not a fan of fish and I think she liked that the seasoning pretty much obliterated the fish taste, lol.
