Fisherman's Quick Fish

Made this tonight and really loved the easiness! I did not have Italian dressing so tried Southwest Ranch and colby jack cheese. Great combination. My husband is gluten intolerant and the chips work great for that. Will definitely make again. May try with chicken too. Thanks for the recipe:)

Made this today and loved it. I had to change a couple things because it was what I had. Used .75 cups 2%milk and 1/3 cup butter in place of heavy whipping cream

Cinnamon Apple Healthy Smoothie

I haven't tried many of these kind of smoothies yet, but I found it hard to take down. My kids didn't like it at all. I think it would have been better maybe with more ice. Or if the apple juice had been frozen. Wasn't cold enough for me.

Pumpkin Cheesecake Squares

I took this recipe to the church cookout. Several people were asking who brought it and complemented on it. Personally, this is a new weakness of mine. Love the combination of sugar cookie, cinnamon chips, and the cream cheese mixture! Yummy!

Cheesy Sausage Zucchini Casserole

Really liked this recipe...it's one of those that you can change things up if you want and it still works. I didn't have any fresh tomatoes on hand, so I used a can of diced tomatoes. Also, I needed to speed things up so I used some leftover couscous (instead of rice) and used Jimmy Dean turkey sausage crumbles in place of the sausage. Ate with tortilla chips. Turned out great!

Mouse's Macaroni and Cheese

Mexican Casserole

Easy and yummy...added a chopped onion and some garlic. did not drain the beans. did not put any chips on it cause I wanted to dip them after. doubled the salsa. so good! thanks for sharing!

Chicken Soup II

Made a couple changes but stuck to the basic recipe. Had some shredded zucchini in the freezer so threw some of that in in place of some of the spinach. Also, didn't have enough carrots, but didn't seem to hurt anything. Used some chicken that was already cooked, so used 8 chicken buillion cubes instead of the chicken stock. I thought it was great. Very hearty. Was looking forward to leftovers today. Was even better the second day.

Calico Squash Casserole

Crispy Pretzel Bars

I made these for our church's summer picnic's bake wheel. So nice not to have to turn the oven on. The kids (and I) really loved them. I made them as the recipe stated and had no trouble. Very easy and the kids helped me. Thanks for the recipe!

Fish and Veggies Primavera

This was a very quick and easy recipe. I used frozen veggies and used butter spray instead of lemon juice (my husband doesn't like anything with lemon flavor). Turned out perfect! Even our kids liked it.

BBQ Pork for Sandwiches

So easy and so tasty! Only made a couple changes...ran out of bbq sauce so used ketchup (about 1/3 recipe). Sweet BAby Ray's is our favorite bbq sauce. Also, used pork loin because that's what I had here.

Yellow Squash Casserole

Loved this recipe..only changed a couple things. used garlic herb crackers instead of buttery round crackers and I used shredded squash instead of sliced. Tasted great and the family loved it, too. Thanks for the recipe!

Traditional Mashed Potatoes

I made one change...I used 1 part butternut squash and 2 parts potatoes to use up some of our fresh squash. I cubed the potatoes and the squash and put them in to boil together. I boiled them for longer...40 minutes before I mashed them. Turned out great and I was able to sneak in some veggies that the kids didn't even notice. Thanks for the recipe.

Fabulously Sweet Pear Cake

This cake was very good. Only thing I would recommend for others is to watch the baking time. I think 1 hour would have been long enough. Came out very dry for that reason. Great flavor though.

Easy Cajun Grilled Veggies

Very good! We made this in the winter and instead of putting it on the grill, we used the oven broiler. It had to be in the oven a little longer (5-7 minutes on each side), but it was worth it. Thanks Amanda

Ann's Shrimp Etouffee

My husband and I really enjoyed this recipe. I was looking for something different to make during lent and this was perfect. I used thawed frozen shrimp instead of fresh and it still tasted great. Also, I sized the recipe down to 4 servings and that was just the perfect amount for the two of us. Tasted great over steamed rice! Thanks for the recipe! Amanda
