Kumquat Marmalade

Followed others advise and added less water and less sugar. I added the orange peel from only 1/4 orange finely julienned; I soaked all finely chopped fruit in water for about 1 hour. Added pectin and a bit of vanilla. It is DELICIOUS!!

Apple Turnovers

Great recipe! Following the advice of others, here are the changes to the original recipe 1. Used only 2 good-size apples 2.Chopped apples in smaller pieces. 3. Reduced brown sugar to half cup, and added a sprinkle of freshly grated nutmeg. 4. Cooked apples for about 10 minutes. 5. Let apple mixture cool, before making the turnovers 6.Do not worry about making perfect squares, triangles, or if edges do not seal completely. 7. Brush with egg wash (one egg+1 tablespoon water- beat until well mixed. 7. Line baking sheet with non-stick aluminum paper. 8. Baked for 20 minutes.

Bread Pudding II

Great recipe!. I make it mixing Challah and sandwich bread (both a few days old, and use half and half instead of milk. If you want to give it a New Orleans "adult" twist, serve it with warm Whiskey sauce on top.(recipe from this site). Yummy!

Marinated Baked Pork Chops

This recipe is awesome. It can be even better following the common advise of other reviwers: Double the amount of sauce adding garlic and minced onion; marinate the meat for about half hour. You can cook these in the oven (uncovered for last 20 minutes) , the grill or your stove top. It is finger-licking goood!!!

Colombian Lentils

Pineapple Upside-Down Cake VII

Way to sweet;and it does not need all that butter either. I followed the instructions exactly except I baked it in a regular pan instead of using a cast iron. It came out looking great. I might make it again,but I will use half the butter and probably 1/4 the amount of sugar.

Deep-Fried Turkey

Yes!, once you try a fried turkey,you don't ever want to go back to baking one. Here are two important tips: First it is essential that you inject the turkey (use the Fried-turkey marinade from this site, adding a good amount of cajun seasoning -Zatarans or Chachere's- to make it spicy!), also rub the marinade on the outside and leave the trukey in fridge overnight. Second, yes the oil is expensive, but here in New Orleans we never go to all this trouble just to fry one turkey; we fry 5 o more at a time. Jusk ask your family and friends to chip in for the oil and then have a BYOT party (bring your own turkey). Once fried, the meat freezes well and you can eat fried turkey until X-mas. Third, use a pulley to lower the bird into the hot oil.....and don't let children or pets near it!!!

Strawberry Angel Food Dessert

This dessert is easy, fast and delicious! Instead of using the supermarket artificial glaze I make the Supreme Strawberry Topping (from this site). My picky teenager son loves this!

Monkey Bread I

Outstanding! I used only one can of Pillsbury Grands Jr-buttermilk biscuits. Cooked it in a 8'inch cake pan for 14 minutes and inverted in into another 8'inch pan as soon as it came out of the oven.Delicious!
