DSF's Pretzel Bread

Amazing! Great bread! Let it stay moist when you set it to rise. Let the baking soda broth brown and boil a bit before putting dough in it.

First Prize Strawberry Rhubarb Crisp

It was very bland. Not as good as a crisp recipe with the bottom on the top. The fruit mixture was very flat.

Baked French Fries I

They were powdery and almost tasteless beyond the taste of powder. Maybe I had bad spices, but will look for another recipe next time. Maybe a little salt and pepper would help or instead.

Make-Ahead Vegetarian Moroccan Stew

Absolutely perfect blend of spices. Be generous with the russet potatoes or white potatoes. Served with warm fresh wheat rolls and butter. May try over quinoa next time.

Chicken Breasts in Caper Cream Sauce

So easy. We don't have dill weed hanging around in the house, so substituted 1/2 tsp chives and 1 tsp parsley. The sauce is delicious and some red potatoes and cauliflower go well with it.

Italian Bread Bowls

Unbelievably delicious, and exactly better than any paneria. My family and guests raved. I agree with the tablespoon sugar into the yeast mix and also make 7 bowls, not eight. I'm not sure all the cornmeal didn't just drip off with egg-white. Why not stir in the cornmeal into the egg-white mixture?? Baking it to a crusty brown is the way to go and serve with soup while they are still warm.

Eclair Cake with Chocolate Ganache

Yes, the shell was outstanding and the filling was pretty good, but I felt the bittersweet chocolate detracted. I wonder if milk chocolate ganache would taste better. Also, I whipped to stiff peaks, but still the cream filling was a little runny.

Strawberry Angel Food Dessert

I was expecting something more like strawberry shortcake, but the stickiness of the glaze made it less palatable. Even my school age kids who love strawberries did not really enjoy it. The cream cheese layer is just a little too thick and creamy and thick thick glaze didn't help. Lot of leftovers. I suppose with less glaze and more strawberries it would be better? Not likely to try it again without trying a few modifications to the recipe.

Ben's Bearnaise Sauce

It was very tasty, but seems like all egg yolk-based sauces, requires strict attention to the heating point of the yolk and whisking to avoid the separating. Even with, the separation is difficult to avoid. I wonder if adding the vinegar reduction after whisking the egg yolk and butter together, rather than before, would help prevent separation. It works better that way with my hollandaise sauce.

Tomato-Cream Sauce for Pasta

Loved it! I used diced tomatoes with green chilies instead of tomatoes alone and it was just a nice spicy zing to it.
