Mediterranean Quinoa Salad

Just made this and put in the frig for dinner. Sneaked a bite and its delicious!! Followed the recipe to letter except that I only had 1/2 cup of juice from the lemons I had. Definitely try it, you won't be disappointed.

Slow Cooker Chicken Pot Pie Stew

I followed the VIDEO recipe almost to the letter and this was really excellent! That is, I used only one bouillon cube, one teaspoon of pepper and I used garlic powder in place garlic salt. (Even with those changes it was still fairly salty, which was just fine for our taste buds, but some might want to cut down even more on the salt by eliminating the celery salt. ) Was really really easy, no fuss -- I served over those Pillsbury type bake in the oven biscuits that come in a tube. Yum!

Pesto Chicken Florentine

This is wonderful and very easy!! As several reviewers recommended, I used a whole bag of fresh spinach and a jar of prepared Alfredo sauce. (Also, I put a little bit of milk in the "empty" jar and shook it to get every last bit of Alfredo out of it.). One other change I made was to increase the pasta almost a whole pound! There was plenty of sauce to cover this much pasta. Also, your first step should be to start the water boiling for the pasta. By the time it's boiled and the pasta is cooked, the sauce/chicken is all ready. Finally, contrary to the written directions, never rinse your pasta! Just cook to aldente and drain. Definitely a keeper!!

Baked Dijon Salmon

This recipe was fabulous, as is. Did a side dish of baked red potatoes, a perfect, easy meal. Totally agree with the comment that you should not provide negative reviews when you don't follow the recipe. My favorite dish is salmon, and this was a wonderful variation. I increased all the ingredients proportionality to serve 4, and my family loved it!

Quick and Easy Black Bean Soup

This was absolutely fantastic as is... I cheated and used the store-bought chili paste/condiment but it was fabulous. Don't forget to also top with a spoonful of sour cream and fresh cilantro.

Sausage Pasta

Wow,wow this was GREAT! Per other reviews I substituted fresh basil for dry, fresh spinach for frozen ( I roughly chopped up a small pre-washed bag of spinach and added it the colander with the boiling pasta less than a minute before before lifting out the colander) and substituted a large can of diced tomatoes for the smaller one. For sausage I used a pound and quarter package of name brand Italian link hot sausage, removed the skins and chopped links into bite size pieces before adding to the pan. Per another review I put the chopped onions/garlic in the pan at same time as the sausage. Used a pound of pasta, which fit perfectly with the increased tomatoes and sausage. Also threw on extra grated cheese and tossed it all together in a large bowl before serving at the end. Yes, there is a good amount of juice, but it was wonderful to sop up with Italian bread! No bowl necessary, plates worked fine. Definitely serve this with bread!!! Everyone LOVED it, even my picky picky daughter. Definitely stay with the hot sausage, we all thought it made this great. Thank you for posting this recipe!!!!!!
