Cauliflower With a Kick

I loved this dish!! I followed another review and added garlic to the pot of water when cooking the veggies. Did add about 2 tablespoons of sour cream to the mixture and made sur to beat well with the electric mixture - what a treat!! I teach cooking classes at a local grocery store and I plan to use this recipe in the fall.

To Die For Blueberry Muffins

I have made this recipe several times and I have finally perfected it. I take the muffin ingredients times 1.5 to make 12 rounded regular sized muffins. For the milk (comes to about 1/2 cup when converted) I use 4 oz. Blue Bunny Vanilla Creme yogurt and about 2-3 oz. milk. I think this really adds to the flavor and texture of the muffin. When using the conversion I also use 1 whole egg, and one egg white. As other reviews have suggestion you can cut the topping ingredients in 1/2 or just use raw sugar instead. When I do make the topping I use brown sugar. Try playing with different flavor combinations, my favorite is raspberry/peach. I have also done blackberry lemon (added 2 tsp. lemon zest and 1-2 T lemon juice to the batter) With the suggestions this recipe is FABULOUS!!!

Brooke's Best Bombshell Brownies

After reading the reviews and looking at another highly rated recipe on the site, I decided to melt the one cup of chocolate chips and add to the batter at the end after slightly cooled. I also added an additional 1 cup of mini chocolate chips. These brownies were so thick, rich and gooey. The chocolate chips really added to the depth of the brownie, and the mini chips melted right in during baking. (I did coat them in flour first)

Hawaiian Cake

This cake is so delicious. It is light and creamy with the perfect blend of pineapple and coconut. I thought I lost it though because taste of home has changed the recipe on their site, but this is my favorite version. I made it just as the recipe stated.

Orange Pecan French Toast

Soooooo good! Very sweet, other reviews are right about it being more of a pecan roll consistency. I don't use the corn syrup when I make this and it is still plenty sweet. It tastes best if you use homeade cinamon swirl bread. I make this everytime I have overnight guests because it is so easy and always gets compliments.

Pumpkin Cookies I

These cookies are soooooo yummy!! They have more of a cake like texture and are very moist. I used 1/2 stick marg and 1/2 tub marg instead of shortening to decrease the trans fats. I also used 1 cup whole wheat flour and 1 cup regular flour to increase fiber. I used splenda instead of the sugar to reduce the calories. I also used semi sweet choc instead of butterscotch chips (only 1 cup) What great tasting healthier alternative to a regular choc chip cookie!!
