Drop Biscuits and Gravy

Great, quick, easy recipe. I made them vegetarian by adding seitan "sausage". I also added some red pepper flakes to get back the spiciness that was missing from not using real sausage. It was a big hit. I'll definitely make this the next time we have overnight guests!

Homemade Black Bean Veggie Burgers

I pretty much followed this recipe to a tee. I just put in a handful extra bread crumbs and a bit more chili powder. We LOVE these burgers. I topped it with spinach leaves, pepperjack cheese, and some ketchup and mustard. Next time Ill try topping it with avocado and sour cream. I'll definitely be making this again!

Lentil Soup

Simple Spinach Lasagna

I'm so glad I found this recipe. I've made it twice now and tweeked it to what my friends think is perfection. Do NOT boil the noodles first, it isn't necessary. Saute onion, spinach, and 1 jar of artichokes, 1 jar of roasted red peppers in a sauce pan. Add spaghetti sauce and (here's the key) 1 lb veggie crumbles. It is amazing. I also layered some fresh spinach leaves between the meat and cheese layers. I finished with a layer of mozzarella for a browned cheesy top. Great recipe. It gave me a good base to experiment!

Eggplant Parmesan II

Great recipe! I've never dealt with eggplant before, so I was a little nervous. This was very easy. I used a plastic bag for the coating of egg and a little of the breading. I also pre-treated the eggplant like many reviewers suggested with a little salt for about 20 minutes, then washed. GREAT dish. My husband, who usually is not fond of eggplant, loved it!

Baked Potato Soup V

This was a little too thick for me. I think next time, I would use the flesh of half the potatoes and use boiled chunks of the other half. The soup was a little bit too much like mashed potatoes. The flavors were good though!

Orange Cranberry Drops

These were a HUGE hit this Christmas. I made them for everyone and attached a few with each gift. Everyone loved them and talked about how unique they were. The orange flavor perfectly compliments the cranberries. I added chocolate chips to one batch, but wasn't crazy about it. The chocolate overpowers the other flavors. Stick with the original and you'll be happy!

Very good biscuits. Don't forget to wipe the flour off the bottom before they bake. It does make them a little dry if you don't. I may add a little bit of butter on top as they bake next time.

Boilermaker Tailgate Chili

GREAT recipe. It is just the right amount of spice and flavor. I used half pork, half bison and it was delicious. I made a HUGE pot and we ate it all week. NEVER got tired of it.

Brooke's Best Bombshell Brownies

These are amazing, chewy, chocolaty brownies. YUM. I'm giving them in a Christmas gift basket and know they'll be a HUGE hit. I love the little pockets of chocolate that you get form folding in the chips. YUM!

Big Soft Ginger Cookies

It's good, but I was expecting a more strong gingerbread taste. I might up the spices and molasses the next time. Mine didn't turn out as dark as the photo. I also got 36 cookies out of one batch, not 24, so that was a nice surprise!

Very easy! Very moist cake, but nothing exceptional. I did not find that it was too milky as in other reviews. You have to let it soak overnight to get the real juicy effect!

Ranch Dressing II

I wouldn't use this on a salad because it is pretty thick. But, I used it on a chicken wrap and to dip veggies in and it was great. I used Olive Oil mayo and that was quite good. Great recipe!

Black Magic Cake

I've never gotten so many compliments on a cake before! I added blueberries, strawberries, and raspberries between the layers and on top after drizzling a chocolate sauce on top. GREAT recipe. It is so moist and the coffee really makes it. It adds a great, subtle flavor. Definitely don't leave it out.
