About this Cook
I'm married, in my 20s, and living in Chicago. I'm a music teacher for elementary and middle school students in the city. I LOVE to cook when I have the time, which lately isn't a lot! My husband and I love traveling and took a seven month trip around the world!
My favorite things to cook
I love baking pies and trying new ethnic recipes. Lately I've been making a lot of soups for fall. I used to bake bread every few weeks, but haven't had the time lately.
My favorite family cooking traditions
My mother makes wedding cakes, occasion cakes, and cookies out of our home for a living. At Christmastime, our house would be FILLED with all sorts of specialty cookies stacked on every countertop and table. The smell and sight of the Christmas cookies is a great memory.
My cooking triumphs
My latest two pies (Bumbleberry Pie II and Grandma Ople's Apple Pie) have been a HUGE hit. I also make a mean veggie lasagna and black bean soup.
My cooking tragedies
I made some disgusting Vegan brownies once that had zucchini in them. It was gross.

Homemade Black Bean Veggie Burgers
I pretty much followed this recipe to a tee. I just put in a handful extra bread crumbs and a bit more chili powder. We LOVE these burgers. I topped it with spinach leaves, pepperjack cheese, and some ketchup and mustard. Next time Ill try topping it with avocado and sour cream. I'll definitely be making this again!

Lentil Soup
Great soup! And it lasted us FOREVER. It's even better re-heated. I served it with cornbread and it was a big hit.

Simple Spinach Lasagna
I'm so glad I found this recipe. I've made it twice now and tweeked it to what my friends think is perfection. Do NOT boil the noodles first, it isn't necessary. Saute onion, spinach, and 1 jar of artichokes, 1 jar of roasted red peppers in a sauce pan. Add spaghetti sauce and (here's the key) 1 lb veggie crumbles. It is amazing. I also layered some fresh spinach leaves between the meat and cheese layers. I finished with a layer of mozzarella for a browned cheesy top. Great recipe. It gave me a good base to experiment!
