Chocolate Meringue Cookies

Amazing. The egg white/sugar mixture must immediately cook when you place the cookies in the oven because my batch was crispy on the outside and gooey from the chocolate chips on the inside. Awesome!

Simple Spinach Lasagna

I used a 16 ounce bag of frozen spinach, doubled the spices (but made it with 1/2 of the salt) used a 28 ounce jar of sauce and a 14 ounce jar of diced tomatoes with spices, used fat free ricotta instead of cottage cheese and used a about 10 or 11 ounces of noodles. Made it the night before and stuck it in the fridge. I cooked it for 45 mins at 350 and then 15 mins without the foil. Would recommend cooking it without the foil for longer if you like the burnt stuff on top like my husband does. I used all organic products and whole wheat lasagna noodles for a total of 375 calories and 11 grams of fat per 1/8 of a pan. Awesome! Fresh parsley is a MUST!

Seven Layer Magic Bars

I added Heath toffee chips (about 1 cup) as the layer before the peanuts. Also, you must use salted party nuts because they are sort greasy and taste great when they are cooked!

Almost No Fat Banana Bread

I used 1/2 cup sugar, 3 bananas, 1/2 cup banana-vanilla low-fat yogurt (Stonyfield brand) for the applesauce, and added 1/2 teas vanilla and it was AMAZING!!! So moist and tasty. Especially with Brummel&Brown on it!

Chocolate Banana Bread Pudding

This is a GREAT dish. It tastes the best when the entire thing is allowed to set and cool completely. Otherwise, the chocolate chips smear throughout the dish and overpower the flavor.
