Jambalaya II
Fabulous! This was my first time making jambalaya that didn't involve a Zatarain's box :). Like some other reviewers, I used chicken breasts. I added seasonings to the chicken broth, as well. I used Trader Joe's andouille chicken sausage, and browned it in the pot along with the green peppers. I omitted the onion and used onion powder instead. Otherwise, I followed the recipe. This is delicious, and I will definitely be making it again!

Lentil Soup III
Cheap, easy, and healthy - now that's my idea of a good recipe :). I had never made lentil soup before, and I doctored this recipe to suit my tastes and it turned out really well. I followed some reviewer suggestions and sauteed the onion with twice the amount of minced garlic before adding it to the soup. I also added chopped fresh spinach and carrots and some curry powder. This is going to become one of my regular recipes. Thanks!!

Cubanos Frijoles
This was fantastic :). I did make a few changes, though - I used a combination of ground turkey and chopped up mushrooms (I didn't have 1.5 lbs of meat so usually when I come up short for recipes, I add chopped mushrooms because they're healthy and cheap). I didn't have any onions so I used onion powder. I also added garlic powder, chili powder, cayenne pepper, and a sprinkle of turmeric. I didn't add turmeric for taste, it just has a lot of health benefits so I try to use it when I can get away with it. The "cajun" seasoning that I used was Emeril's Bayou Blast. When I ate it right after cooking it, I found that the red wine vinegar gave a bit of a sharpness to the dish that I wasn't too crazy about, but reheated the next day, the flavors melded together really nicely. I topped with some shredded cheese and a bit of Cholula hot pepper sauce. Overall, an amazing recipe. Thanks!!
