Broccoli Cheese Soup III

Reviewed: Feb. 1, 2012
As usual I had to do my own modifications to a recipe. :) But this was a great base! I used it as stated but added carrots, celery, onion, garlic pepper, parsley and a lil salt. Also I did not have cream of celery so I used cream of potato instead. Yum!

Oven Fried Chicken II

Reviewed: Jan. 25, 2012
Yum, Yum, Yummy!! My husband loved this chicken. I followed the advice of others and let the breaded chicken soak in the fridge for about 30 minutes. I also added some milk to the eggs, garlic sea salt to the flour and grated parmesean to the bread crumbs. Used less oil than the recipe called for. I used bone-in breasts and drumsticks. Allowed the breasts to cook a bit longer than the drumsticks. This gave the drumsticks time to rest and let some oil drain off. Delicious. The chicken was moist and had a good crunch.

Chicken and Dumplings III

Reviewed: Jan. 23, 2012
Yum! This was delicious and pretty easy to make. I did not use the celery seed. I did add carrots and a few of my own seasonings: parsley and nature seasoning. The parsley in the dumplings, as suggested by another user, was a great addition. The dumplings were light and fluffy, very scrumptious. :)

Mimi's Zucchini Pie

Reviewed: Jul. 26, 2011
Yummy!!! I added fresh basil from the garden and skipped the diced onions. I sprinkled in some onion powder. I also added some cheddar cheese to the top then covered with the tomatoes then parmesan cheese. It was very beautiful in and out of the oven. I was leery at first, afraid my husband wouldn't like it but he loved it!!!!

Basil Pork Chops

Reviewed: Jun. 15, 2011
YUM!!! My husband and I really enjoyed this dish!! I did not have any Chili powder or cayenne/cumin powder to use to make my own chili powder. So I used the smoky maple McCormick spice mixed with Oregano and Basil and the brown sugar. mmm mmm good! I loved the sweetness! Served with homemade Sweet Potato chips and broccoli.

Pesto Chicken Florentine

Reviewed: Jun. 14, 2011
Yummy Yummy! I followed another reviewers advice and cooked the chicken then foiled tented it while the rest was cooked/finish. The chicken was juicy and tender. I also topped the finished dish with diced lightly salted tomatoes. The flavors worked very well together. My husband and I enjoyed the meal. I will make this again!

Spinach Stuffed Chicken Breasts

Reviewed: Apr. 4, 2011
This was delicious!!! I read over the reviews and recipe then customized mine a bit. Prepared as directed. Seasoned the spinach mixture with sea salt and garlic pepper. Then seasoned the bacon wrapped and stuffed chicken with some onion powder and nature's seasoning. I also mixed lemon juice, olive oil, oregano and garlic and drizzled that over the chicken. Baked at 375 for 30 min the removed the foil and broiled for about 10 min to crisp the bacon (used 2 slices per chicken). It was very juicy and had a nice pan sauce. I drizzled some of the sauce over my rice. My husband and I were impressed, will make again, yum!!!

Shrimp Fettuccine Alfredo

Reviewed: Nov. 22, 2010
This was very easy to make and tasty. I used dried parsley rather than fresh and it worked just fine. I also used heavy cream since I was out of half and half. Will make again.
