First time eating chicken pot pie. This turned out fantastic. Taking others suggestions of doubling the sauce, boiling the chicken, carrots, celery and peas and also adding extra seasoning, it was perfect. I used Wal-mart brand deep dish pie crust, baked bottom crust for 6 mins. The top crust I brushed with egg wash and sprinkled with black pepper. I had way too much sauce left over, but I didn't mind. Bake at 375 for 40 minutes. I didn't want my pie to be dry, it was oozing with gravy. I will definitely make it again, and possibly add a few potatoes.
