Fresh Tomato Pie

Reviewed: Aug. 20, 2002
This needs to cook longer because the onions were too raw. Perhaps cooking the onions beforehand and then putting into crust.

Baked Spinach

Reviewed: Feb. 2, 2002
This recipe has a lot of potential but it needs some adjustments. I would wilt the fresh spinach first and then mix all together instead of layering. If not, the top layer of spinach dries out. It could surely use some more zip with some fresh garlic or garlic salt. The cooking time could be reduced to 30-40 minutes or until bubbly.

These are so easy and everyone wants the recipe. Could be halved easily by only buying one can of crescent dinner rolls and using a 9 inch pan.

Asparagus Lasagna

I have made this recipe twice using fresh asparagus and broccoli. Be sure to parboil them first. I also used leftover honey baked ham. We really do like this recipe.

Pumpkin Pie Bars

Reviewed: Oct. 29, 2002
In the ingredients, this recipe should read 1 can of pumpkin pie filling. If you use the regular pumpkin, the bars are too bitter.

Ham and Cheese Picnic Bread

Reviewed: Dec. 30, 2002
The bread itself is excellent. I made this recipe with my bread maker and took it out after the dough cycle. I used cheddar because that was what I had on hand. The time preparation is longer than what is listed.

I combined this recipe with one that I already had. I used two 14 ounce cans of diced tomatoes and doubled the veal amount and also used the crockpot for the braising. Outstanding.

This is really good bread. Cut down the sugar to 1/8 cup and used half cheddar and half Monterey Jack. The consistency is similar to cornbread.

I thought that the sauce was rather bland after cooking for 2 hours. I then added 1 envelope of onion soup mix and that really helped.
