Fresh Tomato Pie

Absolutely Delicious! This is a great pie; not heavy and is great warm and delicious cold. It makes for a great "base" recipe as I have used various ingredients - feta cheese, basil, shallots, roasted garlic,etc. - all based on what was on hand, and it has always turned out perfect! The recipe can be easily converted to a vegan recipe and I even found vegan whole wheat frozen pie crusts at Whole Foods Market. Finally something new to make with my summer bounty of tomatoes. Cheers!

Chicken Enchilada Soup I

This is a wonderful creamy soup that is great when short on time. I use a roasted chicken (shredded), one large can of green sauce (no red sauce) and a small can of green chilis (no jalapeno). Add more broth if it gets too thick. I use a stick blender and give it a few whirls in the pot to smooth out the soup. top with grated cheese, sour cream, avocado, and tortilla strips. (My husband makes strips by cutting corn tortillas into 1/4"x3" pieces, laying them on a paper towel in the microwave and cooking for less than a minute. Watch it well as it will burn quickly!!!)

Guinness® Corned Beef

This recipe was too easy! I followed the instructions exactly, put the meat directly in the pan,covered it tightly with foil and fought the urge to add liquid. The brisket was 3 Lbs and was ready in exactly 3 hours from the oven. I feared it would be dry and tough but it was perfect. I served it with Colcannon and Soda Bread and everything was well received.

Almost Eggless Egg Salad

Very Good! I used a little extra relish, rice wine vinegar(in place of vinegar and sugar)& dijon mustard. It is best to refrigerate it overnight to get the ideal flavor.
