Eat Michigan Salad

Reviewed: May 14, 2014
Great salad! I made it as an entree salad for 2 people. I used 1 bag of butter lettuce, and 1 bag of romaine lettuce. Next time, I'd probably use all romaine .. I liked the crunch - the butter lettuce seemed too soft. The dressing was fantastic - followed the directions to the letter. I think I used a bit less lettuce than the recipe called for so we did have some dressing left over but it's so good, we'll use it on other salads during the week. The candied pecans were so good, especially with the creamy goat cheese. I'm sure I used extra of both of those, too. I could've done without the cherries; they did add a nice chewy texture, but i'm just not a fan of dried fruit. I did add grilled chicken to the salad and ate it as a main dish. I may try Craisins next time. All in all a fantastic salad, super easy to make and one that we'll have pretty often!

Grilled Peanut Chicken

Reviewed: May 13, 2014
Quick and easy! I made a few changes.. I made 2 batches of the sauce, one for basting and one for dipping. The basting one I made as the directions said (except I didn't have curry powder so I used turmeric and I also thinned the sauce with about 2 tbsp of water). The dipping sauce I also made exactly like the directions (again using turmeric instead of curry) and I also added some local honey for a bit of sweetness. I would say I added about a tsp to a tsp and a half. I also thinned this with 2-3 tbsp of water. the chicken came out great! Next time I think I would triple or quadruple the sauce, I found I didn't have enough for basting (4 lg chicken breasts) and we didn't have enough to dip the leftovers in. It's really tasty sauce !

Chicken Milano, extra sauce

Reviewed: May 5, 2014
It was really tasty - For some reason only had enough sauce for 2 servings. I did make a change - instead of the 1 cup heavy cream i used 1 cup whole milk and 1/4 cup half and half. Perhaps if I had used the heavy cream I would've used less sauce on the pasta? Doesn't matter, it was SO good, just need to double or triple the sauce.

Buttermilk Pancakes II

Reviewed: May 4, 2014
Delicious pancakes! I followed recipe exactly and they came out fantastic. One thing though, the recipe makes way more than twelve 5" pancakes. I would say you can easily get 12-15 ten inch pancakes (maybe it even made a bit more. ) I cooked them in olive oil and they were just delicious.

Whipped Cream

Reviewed: Jun. 27, 2010
I didn't have a metal bowl so I used a glass bowl. I froze it for 20 minutes or so.. I also froze the whisk attachment to my handmixer so it'd be nice and cold. I also did not use powdered sugar (didn't have any) so I used 2 packets of splenda. It came out really good (not too sweet, but that's okay because I don't like it to be too sweet). with the electric handmixer it took less than 5 minutes to have PERFECT whipped cream.

Chicken Pot Pie II

Reviewed: Dec. 22, 2008
Great recipe -- a few comments though - - I added potatoes; I put them in with the chicken so they cook pre-cook. - I did not add the parsley (didn't have any) and I halved the thyme and it came out great. The recipe fits in a deep dish pie pan - if you're using a standard pie pan you may be able to get 2 pot pies out of this recipe. I will definitely make this again, THank you!

Lemon Raspberry White Chocolate Mousse Cake

Reviewed: May 10, 2008
I have to say this is a bust. The white chocolate mousse is runny and won't frost the cake. I sit here with it half stuck to the sides of my cake and it looks awful. It's for my grandmothers 90th birthday and I don't know what to do. I did also try to add some vanilla instant pudding as someone recommended and it just became more "yellowed" and gross. I will never make this again. It's a good idea but in reality it is like putting yellowed soup on your cake.

Cream Cheese Penguins

Reviewed: Dec. 21, 2007
These are so cute! I resized the recipe to make 50 penguins and it called for 2 3/4 eight ounce cream cheeses. We didn't even use half of it! We used jumbo olives as the recipe stated but in the future I think we'd do colossal. The medium are perfect for the heads. The beaks are truly the most difficult part. A small knife will work good to cut out a small section for the beak to fit in. As a previous reviewer suggested, the thinner the beaks the better. I ruined quite a few "heads" by trying to shove big beaks in there! We're serving these tomorrow at a Christmas party and I think they are going to be a big hit. Thanks for posting such a creative recipe!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 28, 2007
I've been making this for years and everyone loves it! I do change it up a bit.. i add lots of bells seasoning and I mix up the types of bread I use - I've used challah, white, wheat, french, etc. For the sausage I used sage flavored pork sausage (green and white tube).. Oh and of course I double the recipe and there are always no leftovers :)

Best Carrot Cake Ever

Reviewed: Nov. 28, 2007
I think this really is the best carrot cake ever. What I did: I drained the pineapples very well. I didn't use all of the liquid from the carrot/brown sugar mixture. I maybe used 2 tbsp of the brown sugar liquid. I omitted the raisins (by accident). I baked in 2 9" cake pans (don't now why everyone says this makes so much cake -- it was perfect in two 9" pans) for 40 minutes. Everyone LOVED the cake. I frosted it with the bourbon cream cheese frosting from this site. I will definitely be making this again!

Bourbon Cream Cheese Frosting

Reviewed: Nov. 28, 2007
Delicious frosting but don't let the bourbon fool you; it will taste strong when you make it but the next day you will hardly be able to taste it. Everyone loved it though !

Baked Cranberry Sauce

Reviewed: Nov. 20, 2007
Just made the recipe and I think it looks and tastes good except it's too much sugar. If I made it again I would use probably 4C cranberries to 1.25 cups sugar.

Pineapple Star Cookies

Reviewed: Dec. 12, 2006
These cookies came out fabulous and were indeed worth the effort. A few tips: -Make sure to boil the pineapple mixture (takes a while on med low heat) before chilling - that way it thickens up nicely. -crush the walnuts up extra fine as regular chopped walnuts were too big. -Add extra milk (if needed) to the frosting to make it loose enough to drizzle. Sprinkle the nuts quickly so they will harden into the frosting. Used these for a cookie swap and they were a big hit. I will definitely make again and possibly attempt other fillings. Thanks for a great recipe

Coconut Oatmeal Cookies I

Reviewed: Oct. 24, 2005
I loved these cookies. I made a few minor changes though. I doubled the recipe and added 1/2 tsp cinnamon and 1 bag of dark chocolate chocolate chips. I used a large size scoop (3 tbsp) and baked for 12 minutes. They came out PERFECT. It's true - even if they don't look done, take them out. They will be perfect ... Thanks for the great recipe
