Best Ever Crab Cakes

These were really good! I made them tonight for dinner & they were very good! I doubled them & made them exactly as called for except I didn't have tarragon so I replaced it with crushed fresh garlic. Then I added 1 1/2 sleeves of crushed ritz crackers to the mixture cause it was very wet. After I mixed everything I formed patties & dipped it in italian bread crumbs to give it a coating. They were very good although I felt they could use a little sauce & the thought of mustard wasn't appealing so I will have to find a sauce for them, but other than that they were great!

Very Veggie Lasagna

This was SOOO good!!! I've been trying to eat healthier & get in more veggies & will admit the thought of putting broccoli & carrots in lasagna was a bit odd but it turned out wonderful! It has so much flavor & I didn't miss the meat at all!! The reason I gave it 4 stars instead of 5 was because my broccoli, even though I cut them up were not cooked as much as I would have liked. Next time I think I will steam them halfway then add them to the lasagna. Here's what I did: I added 1 egg to the ricotta mixture, added tons of garlic cause I love it & sprinkled some basil, salt & pepper in there too. I left out the spinach because I didn't have any & honestly it was already loaded & didn't need anything more! I had to use a jar & 1/2 of sauce & on the top layer of my lasagna I was running low on mozzarella so I used grated parm cheese & it was superb!!!

Fantastic Black Bean Chili

I made this chili because I had all the ingredients I needed to make this & we had a HUGE snow storm & I felt like some nice warm chili would hit the spot!! I sauteed extra garlic in with the onions & added 2 cans of tomatoes, as well as only 2 cans of black beans cause that was all I had. I added red pepper flakes, cayenne pepper, salt & pepper as well. Because others mentioned it didn't have much of a spicy kick to it. Then I threw it all in the crock pot on low for 4 hours. It was good & had lots of flavor, but I think I prefer my usual chili recipe. I like more of a thick tomato based chili with the tomato sauce, tomato paste & tomato puree. Still was a nice change though & it was good! I just prefer a thicker more tomatoey chili.

Baked Haddock with Spinach and Tomatoes

I made this last night & it was good but it didn't have a whole lot of flavor, even after making some changes that others suggested. I think it has potential though! I sauteed the onion in butter & added about a TBSP or a tad more of fresh garlic, added the spinach & nutmeg. Then I put the fish in the dish & sprinkled onion powder, cayenne pepper, & salt on it. Next time I will add garlic powder & regular pepper as well. I put the spinach mixture all over the fish & baked it. When I made the sauce I added 1/4 cup of white wine to it. Next time I'll use a can of tomato sauce & double it cause there wasn't nearly enough! I think with the extra changes it could be really good & healthy dinner :-)

Healthy Living Twice-Baked Potatoes

Delish!!! I only had 2 small potatoes so I cut the filling in half but it was a great healthy potato that actually tasted good!!! The only change I made was using regular mustard cause thats all I had but it was still great! Thanks for the recipe :-)

Pistachio Crusted Chicken

This was pretty good. I was a bit unsure about using pistachio's it sounded good but odd. But I had some shelled pistachios that no one was eating anymore & it was just enough to make this. It was pretty good & a nice change to our usual dinner. I made exactly as written & except I had 4 thin chicken breasts that I left whole rather than cutting into strips. My husband & I enjoyed it was good but not the best thing we ever had & if I ever have pistachio's around again I would probably make this again.

Frozen Chocolate Chip Cookie Dough Balls

Oh my god I've died & gone to heaven!!!!! These were wonderful & deff a good treat to have when your craving cookie dough craving without worrying about the raw eggs! I was a little worried as people were saying the brown sugar taste was too strong but I made them exactly as written & they were phenomenal! The only thing I did was different was using a whole bag of chocolate chips & adding a pinch on salt & baking soda for a more authentic cookie dough taste, then I dipped them in melted Hershey kisses. My hubby & I can't stop going back for more! I'm going to put them in some ice cream later tonight for a nice treat!!! Thanks for the amazing recipe!!!!!!!!!!!!!!!!

Garlic Parmesan Orzo

This was delish! Nice change from the usual pasta, it was kind of like having rice only diffrent lol! I've never used orzo pasta before but it was good! I didn't change a thing. Very creamy & good. My only complaint is that leftovers were not quite that good, it got very dry & bla tasting.

I made this tonight & I thought it was pretty good but my husband on the other hand didn't care for it & he LOVES muscles! I made the broth as stated except I used half fish stock & half chicken broth to give it more of a seafood taste, I also replaced the water with clam juice & added way more garlic since we are garlic lovers! And added a few shakes of red pepper flakes. The broth was great....my husband agrees this was the only thing that was good!! But that was my fault I bought fresh muscles & clams but cheeped out & bought a frozen bag of mixed seafood that was absolutely horrible!! Also both my husband & I thought it needed more substance, either potatoes & rice or egg noodles added to it. The broth was great though! But again it was my fault.

Stir-Fried Mushrooms with Baby Corn

This was delicious!!!! My husband thought it was good but not great but I however loved it! I've been trying to find a good asian stir fry veggie recipe to go with the Baked Teriyaki Chicken from this site! The changes I made were adding more garlic because I love it! I also used canned baby corn because I couldn't find any fresh & have never seen it fresh. I left out the fish sauce since I didn't have any so what I did was use 2TBSP soy sauce to make up for it, I also used 2TBSP oyster sauce since I added fresh broccoli to the dish & it needed more sauce. I also used red pepper flakes while stir frying since I didn't have any chili pepper. It was good my only complaint was I think I will add less cornstarch or leave it out all together next time. I know the sauce is suppose to thicken up a bit to stick but it was a little too thick for me. But still very good!

Awesome Slow Cooker Pot Roast

This was a great recipe!! I usually make one that uses Catalina dressing which is great but my hubby wanted something a little different so he found this one! I took sdgirl's advice & made exactly as she had suggested except I used a full packet of onion soup mix instead of half & I used chicken broth instead of beef because that was all I had. It was amazing & oh so moist! Cooked on high for 3 hours, low for 2 & then kept it on warm for an hour cause it was done a bit early! It was awesome! Can't wait to make it again!

Cornucopia

This was amazing!! I was a little nervous about trying this since the directions seemed complicated but it was so easy! I do recommend having another person help you though. A second set of hands makes it easier! I didn't have any problems with the dough being to slippery or falling off during baking which I was worried about. I didn't use the glaze as glue, I just stuck the bread right to the foil & then used the glaze over the whole thing when I was done. I also only needed 2 containers of dough. I put fruit in the cornucopia & then I made royal icing flowers & decorated the whole thing, it was beautiful! Everyone was sooo impressed! I'm going to make this a tradition in my family! Thanks for the wonderful idea!

My Best Clam Chowder

I made this for dinner the other day & it was pretty good! I used 3 cans of whole baby clams instead of minced, I also used a bottle of clam juice instead of water. Before I started the chowder I cooked up some hickory flavored bacon, then placed them on a plate & crushed them up. I also put the bacon grease in the pan with the potatoes, carrots, etc to add flavor & sprinkled a little garlic powder in there. I added a tiny bit of cornstarch to the half & half mixture cause I like a thick chowder! It still seemed to need a little more flavor, but it was still really good! Next time I make it I think I'll use heavy cream instead of the half & half & add real garlic to it instead of powder. Over all very good chowder!

Downeast Maine Pumpkin Bread

This was delish!!! Let me first start off by saying neither I nor my husband are big pumpkin fans.....at thanksgiving I avoid pumpkin pie like the plague lol I'm just not a fan at all. However my husband recently started having pumpkin muffins at honey dew & so I thought I'd try it. It was fantastic!!! A nice fall treat! The only changes I made were adding 1 cup of nuts, 1 tsp (didn't measure just added a splash!) of vanilla & 1 cup of brown sugar, 2 cups white sugar. Then I made the cinnamon butter on top. I made 1 loaf of bread & 12 muffins. Put them both in the oven at the same time baked the muffins for 40 minutes & left the bread in there for an additional 30 minutes, it was delicious!! Served with honey ham dinner, sweet potatoes & green beans for a lovely fall, early thanksgiving dinner!

Chewy Coconut Cookies

This was really good! I'm not a big fan of coconut & thought this could be a disaster, however I made them to go along with a Hawaiian dinner I made & thought this would go good! It deff was a hit! The only problem I had was that I needed to cook them for 12 minutes rather than the 8-10 because they were far from done. But thats not a big deal at all! They were delish!!!

Butternut Squash Fries

SOOOOO good!!! My household is not a huge fan of squash including me, I only like a tiny bit at thanksgiving but this was a great healthy way to get everyone eating it a bit more! I cut up into fry shapes & put in a zip lock bag with just enough olive oil to coat them (didn't want them to get soggy!) Then sprinkled cinnamon & nutmeg on them. I didn't measure anything just eyeballed it. Turned out great! My only complaint was that it was a tad bit soggy (not my complaint I still thought they were good but still could have been crispier!) Next time I think I will broil them close to the heat to get them to crisp up a bit....or bake them halfway then finish them off broiled! Either way great recipe!!! Nice alternative to sweet potato fries....its nice to switch it up a bit sometimes!

Mushrooms with a Soy Sauce Glaze

These were great!!! I had some mushrooms I had to use up & decided to try this recipe. We had them along side BBQ steak because these were a last minute thing but next time I think I'll serve them on top of regular steak...they were great!

Ricotta Gnocchi

I've never heard of or made gnocchi before but it looked good so I decided to give it a try. It wasn't hard to make but it was a bit time consuming. The only changes I made were using fresh garlic & adding less mozzarella cause it was wayyy too much! My husband & I both thought it was good but not great. We cooked it for 4-6 minutes because 1-2 wasn't enough & it was still a bit doughy. It was pretty good but neither of us absolutely loved it. If I were to make it again I would make the pasta even thinner than the recipe calls for. However it wasn't good enough in our opinion to put all the effort & time into making these so I probably won't have them again

Cheddar Bay Biscuits

My husband hated these. I didn't think they were great but they weren't that bad either. The garlic butter that you put on top was WAYYYYY too salty! If I do make these again (which I probably wont since I'd be the only one eating them) I would cut way back on the salt since the garlic powder has salt in it as well as the butter. I would probably use real garlic as well. The bread was good but the butter needed to be tweaked a bit.

Banana Split Bread

This was such delicious banana bread!!! I have 1 recipe that I always use thats really quick with bisquick & this by far tops it off!!!! The only changes I made was to use 3 ripe banana's which I'm pretty sure was more than 1 cup! I also used walnuts instead of pecans because thats what I had on hand. Then I sprinkled some sugar on top of the bread before I put it in the oven. Just something I had to do!!! It was DELICIOUS!!!!! I usually cover banana bread in butter but this was perfect as it was!! Just warm it up in the microwave & enjoy!!!! Thanks for the super recipe :-)
