Fish Chowder

This was really good & so easy to make!! I used more chicken stock instead of the clam juice cause I didn't have any on hand & used about 1 1/2 cups of milk in place of the evaporated milk again didn't have it on hand. I tasted it before serving & it was a little bland so I added garlic powder more salt & pepper & a little paprika. Next time I will saute some fresh garlic in with the onions & mushroom mixture. Very good with the changes!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Holy cow was this out of this world!! Definitely the best cupcake ever! Normal cupcakes are disappointing after this! I used chocolate cake mix instead of the yellow & used white chocolate chips instead of chocolate. Brought them to a party & was hoping to have some leftover to take home but they were gone as fast as they got there!!!!! They take a bit of work but are sooo worth it! I'm already craving them again :-)

Traditional Italian Sausage Stuffing

Ok I usually steer away from recipes without reviews but I was taking a chance on this cause it sounded good!! Although it was really good it needed a little fixing up. I cut the recipe in half cause it was just myself & husband. I bought a rosemary olive oil loaf of focaccia bread & it added wonderful flavor! I also bought Jones breakfast sausage (I thought the recipe called for breakfast sausage when I was shopping & couldn't find Johnsonville brand so just grabbed my regualr favorite until I realized it was suppose to be italian sausage, my mistake but it was really good so I will stick to Jones breakfast from now on!) I left out the green peppers, tomatoes & olives we don't care for them, but did add a handfull of craisins which added a great sweetness to the stuffing! Then I opted for the white wine instead of water! It smelt wonderful before I even put it in the oven! However the stuffing was still dry & crunchy when it was done....so my only complaint was that it needed more liquid. But it was my 1st time making stuffing so i didn't want to add more liquid in case it made it soggy....but now I know if it looks like I need it add it before you bake it! It was still good just very, crunchy! Overall tasted great! I'm making this for my 1st thanksgiving dinner with the changes :-)

Fish Roll-Ups

Just finished eating this for dinner & it was fantastic!!! I decided to do this last minute with some fresh haddock & cod my husband caught so I didn't have any crab meat. I was worried it wouldn't be good without it but it was great, will have to make it again with it next time I'm sure it will be even better!! I didn't measure anything just did what looked to be enough & it was awesome :-)

Chicken Tequila Fettuccini

This wasn't too bad, but it wasn't great either! I chopped & prepped the chicken & veggies the day before so it wouldn't take as much time to make. I made exactly as written but use all my peppers instead of just half of them. The sauce was soo runny & sloppy it needed to be a little thicker. It also needed some spicing up it was a tad bland. Wasn't terrible but not worth making again, in my opinion.

Biscotti

These were pretty good. I haven't had much biscotti before this & thought it was good but not great, maybe it was just me! I made it exactly as written except used vanilla extract because its what I had. Once they were done I dipped them in a little melted chocolate. My 19 month old loved them! Good snack to take to the store while shopping & keeps my son in the cart while munching away!!

Aw-some Cole Slaw

Awesome cole slaw!!! I made one other recipe that was ok, but this was outstanding! I used 2 bags of cole slaw mix & doubled the sauce recipe. Served it for our housewarming party & there was hardly any left!!! Definitely a hit! Will be keeping this recipe from now on!

Extreme Chocolate Cake

This was really good, I've never added water to any cake I've made but decided to give it a try. It didn't taste any better or worse than any other chocolate cake I've made so it wasn't anything super special, but it was really moist!! Next time I may try adding hot coffee instead of the water, only reason I didn't try it this time was because I was making it for a children's party & figured they really didn't need the added caffeine lol!!

Sweet Corn Muffins

I made a double batch of these for my husband to take to work & they were gone in a matter of minutes! Everyone ate them right up! I cut the sugar down to 3/4 cup and made 1 batch of regular sized muffins & the other batch into mini loafs which needed a few extra minutes to cook but they were tasty!!!

Ground Beef Wellington

This was surprisingly good!! I wasn't too sure how it would turn out, but it was good, not great but good enough to switch it up with something different for dinner! I used the recipe as a starting point & did my own thing as I went along. The gravy needs to be doubled! I didn't & we hardly had enough. Also add onions & garlic to it as well. For the meat, it seemed kind of bland to me so I added a few shakes of Worcestershire sauce, a few shakes of old bay seasoning, bread crumbs, cheddar & mozzarella cheese, used the whole egg not just the yolk & left out onions since I had put some in the gravy. Then I took my crescent rolls & made 4 individual loafs, it was good!!

Chicken Enchiladas I

This was sooo yummy!!! Besides shredding the chicken, it was fairly easy to make too! I replaced the tomato sauce & water with green chili enchilada sauce (bought green by mistake) & salsa. Also used just a couple spoonfuls of sour cream instead of the full 1/2 pint. Then I topped the enchiladas with an 8oz jar of red enchilada sauce mixed with 1/4 cup half & half too make it creamier! Delicious!!!

Best Spanish Rice

This was sooo good & super easy to make!!! I will never but boxed spanish rice again! My husband & I can't find a boxed spanish rice we both agree on & like but we both loved this!! The only reason I give 4 stars instead of 5 is that it needed a little more flavor so next time I'll add garlic with the onion & add 1/4 tsp chili powder! But even as is, its really good & went well with salsa chicken from this site for an easy mexican meal!!

Salsa Chicken

OMG easy & OMG good!!!! I was kind of expecting this to be salty from the taco mix & bland with so little ingredients but it was amazingly great!!! Definitely gonna make this again!! Served with best spanish rice from this site for a fantastic meal my whole family loved :-)

Waikiki Meatballs

These were really good & soo easy to make! I usually use another recipe similar to this with a lot more ingredients so this was a nice easy change! The only thing I did diffrently was use bread crumbs instead of crackers. Other than that followed the recipe exactly! I would double the sauce next time though! And to save dishes as other reviewers mentioned, bake meatballs at 350 for 20 minutes & bring sauce to a boil on stove top whisking out lumps of cornstarch. Then serve on white rice for a fantastic dinner!

Buffalo Chicken Fingers

This was fantastic! I was wanting buffalo wings but didn't have chicken wings so decided to try this. I marinated the chicken for a day in hot sauce then followed the recipe as written except I used the full egg not just the whites. The flour mixture wasn't nearly enough so next time I will double it. I was worried they wouldn't be very spicy without a butter hot sauce mixture on them but boy was I wrong! Woo were they hot & just the way I like them! Awesome & healthy it was a win win!!!! Will definitely make them again!

Alysia's Basic Meat Lasagna

This was good although I don't know how only 9 noodles was enough for a full sized 9x13 lasagna! I made a 9x9 & just had enough. Anyways it was good, I added some chopped sauteed spinach & mushrooms for added nutrition. Maybe it was that addition but I thought the lasagna was kinda liquidy. Other than that it tasted pretty good!

Black Beans and Rice

This was good but pretty bland. I used chicken broth instead of vegetable & I used 4 cloves of garlic rather than 2. Also added a fresh chopped tomato to it. I will probably still make it, since its healthy & my 17 month old loved it, especially the black beans. A good healthy way to get some protein & fiber into him!! So overall it wasn't anything special but it was good enough to make again!
