Simple Whole Roasted Chicken

Who ever thought of cinnamon on chicken has got to be genius!! I was a little unsure but this was out of this world!! It was the 1st time I've made a whole chicken & it was as good as the store bought rotisserie chickens! I doubled the spices as everyone recommended & rubbed it on & under the skin. I added a little garlic powder to the rub & sprinkled some inside the chicken & stuffed it with an onion. My only reason for not giving this amazing chicken 5 stars was that it was WAYYYY too salty! Next time I will only do 1 tsp salt even though I double the other spices. Otherwise best chicken dinner ever!!!

Shepherd's Pie VI

This was great! As a child I hated shepherds pie but was sick of eating the same things & my hubby likes shepherds pie so I decided to give it another try & loved it!! I used red potatoes with skins on & added a scoop of sour cream to them. Then cooked some garlic in the meat mixture & added 1/4 cup Worcestershire sauce to it. Instead of mashing the carrots I steamed them cut them up then mixed them with frozen corn, peas & green beans to top the meat mixture. Delicious dinner!!

Swiss Chicken Casserole II

This was awesome!! The only reason I tried this was because I had some extra swiss cheese in the fridge which I normally don't use other than for ruben sandwitches & didn't want to toss it. I had 2 chicken breasts which next time I will cut up instead of leaving whole. Also used a whole can of cream of mushroom soup (what I had on hand) replaced milk with white wine, threw in some fresh broccoli & mushrooms with the chicken & didn't measure the stuffing mix just covered the casserole dish with enough. Was very yummy & we had no leftovers!!!!

Hawaiian Chicken Kabobs

This was delicious!! Similar to the teriakki recipe I make, eve my 2 year old ate all his chicken up!! I did not marinate the pineapple with the chicken though just sliced it up fresh & added it to the stick when all the chicken was cooked (not a fan of warm grilled pineapple)

Quick and Easy Pizza Crust

This was delicious & soo easy to make!! I've never made pizza dough before & wanted to make calzones but didn't want to stop for dough at the store so I tried this. The only thing I did different was to add 1/2 tsp basil, 1/2 tsp Italian seasoning & 1/4 tsp onion powder to the dry dough. Then I let it rise for 30 mins punched it down & put it in the fridge till I was ready for it & before baking brushed olive oil with some garlic powder mixed in over the top to help it brown. Absolutely perfect!!!!!! Going to make more & freeze it for even easier dinners :-)

Ultimate Steak Sandwich

OMG yummy!!! The garlic mayo was sooooo good!! Although my hubby isn't a fan of mayo on his steak & cheese so he wasn't a fan & thought the garlic was a bit much. I however loved it! The only change I made was to put the Italian seasoning in with the meat as it was cooking instead of on the sandwich afterwards (sounded kinda funky to me to add on top) Other than that, great!!!

10 stars if I could for holy cow easy....why didn't I ever think of this!!! So simple I just put 1/3 cup sugar in a ziplock & added 2 drops green food coloring to make shamrock cookies for St. Patricks day with my son!!

Easy Cajun Jambalaya

This wasn't terrible but I don't think I'll be making it again. The flavors were good but weird. I added a d can of diced tomatoes & used shrimp in place of chicken per other reviewers suggestions & also added a can of red kidney beans (need more fiber & iron in my diet)

New England Crab Cakes

Soooo good, Im already craving them again!! I added some lemon juice & parm cheese & then formed into cakes & rolled in panko breadcrumbs. That gave it an extra yummy crunch!! So good!!

Mouth-Watering Stuffed Mushrooms

These were very good & fairly easy just a little time consuming. I made 60 mushrooms for a family christmas party & they were a hit, didn't last long at all! I cut back on cream cheese & added some bread crumbs & crab meat to the "stuffing" I baked them for 15 minutes took them out & sprinkled shredded mozzarella on them & popped them back in for 5 more minutes to melt the cheese. Next time I will cut back on the cayenne pepper it was a little spicy but still good. Although they were gone very quick & we enjoyed them I still prefer a little more stuffing to cheese ratio. But no complaints they were a hit!

American Lasagna

Best lasagna I've ever made period!!!! I made it in the afternoon & refrigerated till dinner. The only thing I did different was using jarred Barilla Italian sausage sauce. I grated some zucchini & squash & added chopped mushrooms to the meat. Also used Italian seasoning instead of oregano (didn't have it) & added 2 good splashes of red wine before simmering. Next time I'll use less brown sugar it was a tad sweet, but not bad. Also didn't use parm cheese in the ricotta mixture cause I had none but did add some garlic to it. Absolutely delish & will be my go to lasagna recipe from now on!

Maple Roast Turkey and Gravy

This was my first time making thanksgiving dinner & I decided to try this recipe for all the great reviews! The only changes I made was not using thyme & marjoram instead using a little salt, pepper & garlic powder. I also had to add a can of beer over the turkey (my mom always does this no matter what recipe she uses & it makes the bird tender) I used Sam Adam Oktoberfest, & I'm glad I added it cause I wouldn't of had anywhere close enough drippings to make gravy! I stuffed the turkey with all the veggies including the lemon, why waste it only for the peel?!! And also put some garlic heads in there! We didn't eat the veggies but rather just used them for flavoring the drippings. Very good turkey :-)

Ten Minute Enchilada Sauce

This was great! I wanted to make enchilada's for dinner & realized I forgot to buy enchilada sauce so found this recipe & decided to try making it myself! It was great, just as good as from the store! I didn't have tomato sauce so instead used pizza sauce which was the closest thing I had (hey pizza sauce, tomato sauce its close enough!) I was nervous it would taste funny but my husband & I couldn't even tell! Also only had about 1/8th of a cup of chili powder left so just used that. Great recipe, I might make my own sauce from now on :-)
