Italian Wedding Cookies III

This recipe was perfect. Cookies melted in my mouth - buttery and light. I have a warning though - you will be tempted to want to see a light browning around the bottom edge of the cookie indicating it's done - RESIST! Bake 5-20 minutes as per instruction (you may have to experiment with the time on first batch & adjust for your oven) and DO NOT BROWN. I tested this by lightly browning a batch and the difference was measurable. The lightly browned cookie was harder and not as buttery - the one that I did not brown was light and melted in our mouths. This recipe is a keeper.

Jalapeno Fudge

My jalapenos weren't hot so all I got was baked cheese with bits of green pepper crunch which actually was good but I missed that kick. I live in AZ and it was green chile harvest at the time so I decided to replace the jalapenos with roasted green chiles, the hot variety. DEE- licious! Next time I will make sure my jalapenos are hot and try it again. Overall, I think it's a great low carb snack recipe. Extremely easy.

Banana Cream Pie I

Easy, delicious, everyone loved it. I used corn starch in place of flour and did not bake but rather chilled it for several hours. Perfect.

Ranger Cookies II

Authentic German Potato Salad

This turned out amazing! My husband cooked the cod and served it to me. I asked what is it and he said guess. I said lobster? NOPE! Cod! It was great. I've made it twice since then. Like with any fish, careful not to overcook or it'll be dry and tough.

Blue Cornmeal Pancakes

These came out uniform and perfect. My husband is the pancake person in our household and very particular about texture and taste when it comes to cornmeal pancakes; he rated these 5 stars. I FINALLY found a recipe he likes (loves!)!!! Thanks.

Sweet Potato Surprise

Took others advice didn't add white sugar, used twice as many potatoes, everything else the same and it was still a strong banana flavor. Next time (and I will make it again!) I'll use only one banana. Thanks!

White Chocolate, Chocolate Cookies

Very good, easy, few ingredients. Husband says not as "chocolately" as he'd like but his sweet tooth runs deep. I bake in an electric oven at 4000 ft so I kept mine in for 12 minutes.

Hoe Cakes

I agree with the comment to let the batter sit a few minutes to thicken however, still, the cakes were thin and dense with a bland flavor. They may be better as a side to chili or as a crepe with lots of sugary, wet toppings. Guess we prefer our corn cakes fluffy and sweet. I will try other recipes until I find "the one". Thanks.

I have an electric oven too and needed to cook them 19-21 minutes depending on the size of the cookies. They are very good but taste more than sugar cookies with chocloate chips. The batter was drier than I'm used, afraid it wasn't going to work, but they turned out chewy and nicely formed.

Pecan Pie Bars I

Excellent. I used 9x13 pan for a thicker crust but my hubby said too thick (I thought yummy, depends on what you like). Brought to pot luck and they went FAST! Got lots of compliments.
