Pumpkin Walnut Cake

I used brown sugar instead of white and pecans because it is what I had on hand. I baked it for 15 minutes longer than called for and it turned out wonderfully.

Wonderful recipe. My chicken breasts were extra large so I extended the cooking time about 20 minutes and they were still so moist and juicy.

Baby BLT

This was a very tasty recipe and not as time consuming as I thought it would be. I made them last night for a potluck today and making them so far in advance made the tomatoes a bit mushy. Next time I won't stuff until right before serving.

Pumpkin Chocolate Chip Cookies III

My family always looks forward to the Holidays b/c a supermarket will start to sell their pupmkin chocolate chip cookies. My family tasted these and we will never but them again. I had to make two more batches because the first disappeared so quickly not every one got to taste. I did add a T. of Pumkpin Pie Spice and a tad bit more cinammon. I also used my Pampered Chef scooper and they came out looking like they came from a bakery. Thanks for the recipe.

Chocolate Caramel Nut Cake

This cake was so easy and so yummy. I didn't get a defined "filling", however, as described in previous posts. My caramel was pretty runny when I poured it over the cake. Perhaps, next time I will go ahead and purchase a caramel sauce instead. I also added toffee bits to the chocolate chips. Edit: I just realized I added the entire 12 oz evaporated milk instead of the 5oz, hence no "filling."

Downeast Maine Pumpkin Bread

Absolutely loved this recipe. I increased the spice amounts by 1/2 tsp. and made 2 loaves. I added chocolate chips to the remaining batter and made super yummy jumbo muffins. My home smelled like the Holidays.

Blueberry Zucchini Bread

I can't give this a fair rating because I tweaked the recipe. I was trying to go the healthy route and I subbed applesauce for the oil and I think it affected the texture. It came out somewhat gummy (very similar to a dessert we made back home) but the taste is wonderful.

Banana Sour Cream Bread

I have made this banana bread recipe probably a dozen times since I have discovered it. I play with the ingredients (different nuts, adding more bananas etc..)and it is perfect everytime. I love the cinammon sugar "crust", noone seems to mind eating the ends now....

Good Old Fashioned Pancakes

This was my first ever attempt at pancakes and they turned out really well. I made two different toppings (bananas foster and strawberry) and everyone family loved it. My husband came in from outside and said they could smell the yumminess from across the street at our neighbors house.

Jamaica Cake

I made a few changes, I used applesauce in place of oil and used half brown sugar and half white sugar as previously suggested. I am not sure if the changes changed the texture...the texture was somewhat fudgy(?) definitely not cake-like. I also greased my pan and dusted it with cinammon and sugar. Yummy! Yummy! My husband did not want me to share any with my coworkers....

Awesome Carrot Cake with Cream Cheese Frosting

Mini Meatloaves

My husband is a picky eater and was a little hesitant when I told him I was making meatloaf for dinner. I used the muffin pan and he ate three quarters of the mini meatloafs. They were a huge hit! He also asked if I could make more for lunch the next day.
