Chicken Enchiladas

I love this recipe! I don't like refried beans, however, so I use black beans instead. I would definitely add a little chili pepper and cumin to the chicken mix, and sauted onions are really good in there too if you don't have green onions on hand. The best secret is to make the Ten Minute Enchilada sauce on this website instead of using canned. So tasty!

Crunchy Turkey Salad

I made this recipe with 3 changes, because I didn't have the exact ingredients. I used regular mustard instead of dijon, cilantro instead of parsley, and added about 1/2 cup of pomegranate arils. All I have to say is YUMMY!!! I had several people for lunch when I made this and everyone raved about how yummy it was. Definitely a keeper!

Satiny Chocolate Glaze

I tried it in the microwave like other reviewers suggested and it turned out horribly. I don't know if i overmixed it or if it was the quality of the chocolate, but it was instantly grainy and never emulsified. Completely wasted!

Onion Pie

I thought this was a great recipe to use up the surplus of onions I had on hand. I don't think I caramelized the onions enough, I would cook them until they are nice and brown next time to get them a little sweeter. Also, I used deli ham chopped up since I didn't have any bacon. Overall, very good.

Big Soft Ginger Cookies

Best Cookies Ever! I did like other reviewers and used O.J. instead of water and chilled the cookie dough before shaping it. I was out of eggs when I made them, so I substituted 1 Tbsp. of ground flax mixed w/ 3 Tbsp. of water. You couldn't taste a difference and the cookies turned out perfectly. These are a big hit and my husband was really glad that I came home with some of them left over from the cookie exchange. YUM!

Fettuccini Carbonara

This was a great weeknight dinner. I didn't have any shallots, but I beefed up the recipe a little with some chopped up marinated artichoke hearts and a can of mushrooms added to the bacon when I added the garlic. I also added about 1/4 c. of white wine at the same time. I didn't have any cream so I used milk instead, which was good. Next time I will double the cream sauce part of the recipe and cook the bacon sans onions to begin with in order to let it get a little bit crispier.

Tex-Mex Turkey Soup

Totally yummy! My two year old and my husband both raved over this dish. I did use homemade chicken broth I had in the freezer instead of water, and I used chicken since I had no turkey. Super delish!

Streusel Rhubarb Bread

Very good, I took a loaf to work and it was gone before lunch time. I didn't change the recipe, but I did do my usual quick-bread specialty: after greasing the loaf pans I dusted them generously with cinnamon sugar. It makes the crust delicious and goes very well with the streusel topping.
