Sam's Famous Carrot Cake

Reviewed: Feb. 13, 2007
Delicious but I might use only 1 cup of sugar next time. Doesn't even need frosting.

Reviewed: Feb. 11, 2007
Used whole wheat flour instead of white. Halved the sugar. Added fresh blackberries. They turned out great.

Spicy Bean Salsa

Reviewed: Feb. 4, 2007
Excellent and so easy to make! Use 1 clove of fresh garlic + salt in place of garlic salt. 3/4 cup dressing would probably suffice.

Pumpkin Pancakes

Very good. Used whole wheat flour and a touch of extra milk. Added pecans and chocolate chips. Love freezing these and eating them frozen as a dessert!!

Moussaka

Reviewed: Jan. 21, 2007
Delicious but greasier than I like. I used ground turkey instead of beef, fresh parsley instead of dried, and broiled the eggplant instead of frying. I also only made & used 3/4 of the bechamel sauce. Otherwise, I followed the directions exactly.

Strawberry, Kiwi, and Spinach Salad

Reviewed: Jan. 19, 2007
Used cran-orange champagne vinegar with blood orange olive oil and blackberry jam for the dressing because it's what I had available. I added avocado to the salad. It was delicious.

Hearty Pasta Tomato Soup

Reviewed: Jan. 15, 2007
Very tasty and I love that it has so many veggies! I used turkey sausage. I used 1 can tomato sauce and 1 1/2 can tomato paste because that's all I had. This overflowed my crockpot so I had to take some of the liquid out!

Shrimp Artichoke Dip

Reviewed: Dec. 10, 2006
This dip was polished off at a party in about 5 minutes. People were raving about it. Based on prior reviews, I added some sour cream (1/3 - 1/2 cup), red pepper flakes, and tabasco. I used good Vermont cheddar, and fresh garlic + salt instead of garlic salt. A real winner.

Double Chocolate Biscotti

Reviewed: Dec. 4, 2006
Yummy. I cut them after about 10 minutes of cooling and I did fairly well but it was tricky. I think I lost 15% due to crumbling. For some reason, the Cinnamon Hazelnut Biscotti were much easier to cut... Everyone at work loved them!

Cinnamon Hazelnut Biscotti

Reviewed: Dec. 3, 2006
Delicious and very easy to make. Used food processor for sugar/eggs/vanilla/eggs. Doubled cinnamon. I think I preferred the chocolate chip batch to the hazelnut batch. Everyone at work loved them!

Pomegranate Stew with Chicken (Khoresh Fesenjan)

Reviewed: Nov. 30, 2006
Wow...taste just like the restaurant version! I was truly surprised how easy it was to replicate!!! I substituted cinnamon for cardamom. I put mine in the crockpot after cooking the chicken and onions. I did it for 8 hours on low which ended up burning the top, but the rest was still great.

Double Tomato Bruschetta

Reviewed: Nov. 29, 2006
Delicious. Made exactly as written except I used orange & yellow cherry tomatoes. You could use a lot less oil and it would still be excellent.

Very good though you don't need to drink too much to get your fill.

Avocado Crab Crostini

Reviewed: Nov. 29, 2006
Way too lemony for me. I suggest half the lemon peel in the recipe. I added a touch of Worstishire and touch of hot sauce, toasted it on a English muffin with some cheddar cheese, and then added avocado slices. It was a nice sandwich.

California Italian Wedding Soup

Reviewed: Nov. 27, 2006
I used spinach and turkey and fresh herbs. It was very easy to make and very good, but my friend has a better recipe. The next day, it got really bitter and did not taste as good.

Pomegranate Relish

Reviewed: Nov. 25, 2006
Great with Thanksgiving dinner and a great alternative for diabetics. I used parsley instead of cilantro because a bunch of us don't like cilantro. I didn't juice the pomegranate and just used the seeds. I wish I had juiced it or ground the seeds because the seeds were a bit cruncy. Finally, if you are seeding a pomegranate yourself, it will take a lot longer than the stated 5 minutes! I think it took me 30min to get the seeds out of the pomegranates (though maybe there is a faster technique)!

Garden Fresh Tomato Soup

Reviewed: Nov. 21, 2006
Very tasty but a bit strong/acidic. I ate it with sour cream to tone it down. Probably wouldn't make again. It's possible I just don't like tomato soup that much... I took the cloves to mean the spice... It seemed to work. I did not add garlic at all.

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Oct. 5, 2006
Excellent. Couldn't tell it was turkey.. I used 1 can diced tomatoes in place of a 2nd tomato soup. I also added some water because some reviewers said it was too thick. Made this again with pinto beans instead of black beans and it was equally delicious. One of my favorite recipes...

Autumn Cheesecake

Reviewed: Sep. 25, 2006
Delicious!!! As recommended, I doubled the cheese part, microwaved the apples before placing them on the cake, and added a pan of water to the oven. I think I would do 1.5x the amount of cheese next time... I also skipped the nuts in the crust because I was running low and it was fine. I used my food processor for the crust & cheese. It also looked beautiful after nicely layering the apples on top.
