Tuna Pea Wiggle

This was not very good in my opinion. 2 cans of tuna was used, and after 45 minutes simmering, it still didn't thicken up so cornstarch was needed. Very bland as well. You will want to spruce this up with more modern ingredients, maybe fresh/frozen peas, some spices (garlic, onion, pepper, and parsley), and some cheese/breadcrumbs on top would help make this more palatable. A good first attempt, just not quite there yet. Also, instead of being served on toast, I would try it on plain cooked pasta, like tuna noodle cassarole.

Oatmeal Peanut Butter and Chocolate Chip Cookies

Just made 'em, and I approve! I followed the recipe to a T, except I used steel cut oats and subsituted a cup of whole wheat flour for the white. These really are a combination of the three cookies - they spread like chocolate chip, are crumbly like oatmeal, and had a bit of crunch around the edges like a peanut butter cookie. One thing I found: It took more like 14 minutes to get a cookie cooked enough that I could get it off my baking sheets in one piece. I will be making these again.

Cranberry Corn Bread

This came out very well. It is a nice mix between corn bread and a regular quick bread. I followed a suggestion to place in a 9x13 pan, and it came out a little thin for my liking. I would stick with a 9x9 inch pan for your first batch. I think this recipe is well suited to replace some of the flour with additional corn meal if you want more of a cornbread texture. It was a hit at my company pot luck.

Blackberry Cobbler II

Waaay good! This was so delicious, and was such a big hit at the BBQ I took this to (in the skillet and all - great presentation), that I froze a bunch of blackberries and plan to make this as an alternative Thanksgiving dessert. One note - depending on your berries (mine were uncultivated), you may want to prepare a few extra and strain some of the seeds - mine was a bit crunchy.

Normal Chicken

very, very fall-of-the-bone good chicken. I used drumsticks (I though i bought breasts!) and they came out great. Will be making this again. I added honey to a batch (rather than the suggested brown sugar), and stuck to the recipe with another and both were fabulous.

Fantastic Black Bean Chili

I have made this (along with several variations) dozens of times, and it has always been a success. I also like to add extra types of beans,and sometimes more heat, but the vinegar is the key to this recipe. Thanks!

Raspberry Buttermilk Muffins
