Oatmeal Blueberry Muffins

I used all whole wheat white flour, about 2 tbs. flax seed meal, honey instead of sugar, dried blueberries (about 1/2 cup), and 1 tsp lemon extract. They were probably some of the best muffins I've ever had.

dh doesn't like olives or capers, yet I still put them in and he adored this. The only changes I made was omitting the chili powder and using ground turkey and soyrizo to cut down on fat. We ate it with middle eastern flat bread inspired by the photo.

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

As per other reviewers, added two truvia packets for some sweetness, poppy seeds, used yogurt instead of mayo, but did add one tbs. of mayo in addition because it didn't taste that great with just yogurt. Also made the candied pecans which went well w/ the salad. DH raved about it and didn't even complain that we were just having salad for dinner.

Salisbury Steak

In my haste, I misread the french onion soup portion and thought it was dried french onion soup, so that is what I bought. I just added half the packet in the meat mixture and half in the sauce mixture and I had some sour cream on hand so I added about a cup (I tasted until I liked the flavor). What a great accident I made. It was very yummy, I will make again, but next time I'll add sauteed mushrooms.

Bran Flax Muffins

Used 1 cup whole wheat white flour, 1/2 cup wheat bran, only 1/2 cup walnuts, sultanas instead of regular raisins, no oil, about 4 cups of zucchini instead of carrots and apples and about 1 cup of frozen blueberries. Yum!

Roasted Rack of Lamb

I marinated for a few hours before hand then followed the directions for the searing, mustard, and bread crumbs. DH went crazy for it and he's from France. I did have to cook it eight minutes longer than called for and he likes his meat pink.

Slow Cooker Split Pea Sausage Soup

I really liked the potatoes in the soup. I used the chicken broth as others suggested and cooked it on low instead of high since I have a job to go to all day. I spaced on the sausage but it was still good without it.

Alan's Ultimate Bran Muffins

The only changes I made was to add 1/4 cup of flax seen meal and I used vanilla yogurt instead of plain because that is what I had on hand. I also omitted the raisins because we don't like them. I thought it was the perfect sweetness with the vanilla yogurt, so if you are finding them not sweet enough, try that. They definitely do the job of cleaning out the system, which is why I think most of us seek these out. :)

Delicious Raspberry Oatmeal Cookie Bars

This is a little on the sweet side, but I only had blackberry jam and it's not as tangy as raspberry jam, so I could see that working with the other jam. I wanted to make it higher in fiber, so I subbed white whole wheat flour and added 1/2 cup of flax seed meal and one egg to balance out the lack of liquid.

Thai Chicken Pizza

I decided to go with Gouda cheese and had a half a red bell pepper in my fridge and it was yummy on the pizza (I cooked it). I also made my own peanut sauce and decided to omit the peanuts since this is a pretty fattening pizza. I thought it was really good, but one of my kids said she didn't like the pizza sauce. Go figure.

Jen's Jambalaya

Wow! I followed another reviewers rec and used Chorizo, except it's so fattening so I used the soy version, that added this great spice so I didn't need to use hot sauce. I also added celery with the veggies and some thyme. Lastly, I used brown rice instead of white, I already had a bunch left over from another meal, but I would suggest not cooking the rice in the pot and cooking it separately because brown rice doesn't seem to cook as well in any kind of sauce.

Corn Fritters

I was hoping for more of a hushpuppy flavor, which is probably why I was disappointed. These aren't bad, but they have no sweetness to them. Maybe creamed corn would have tasted better.

Slow-Cooked Tamale Casserole

This wasn't really what I had expected, probably because I'm spoiled from the Fanny Farmer version of this dish wish is amazing. I had to add a lot of salsa to make it taste like something. I would suggest adding lots of yummy flavorful red salsa to the mixture some canned diced green chilies, and another packet of the taco seasoning. I could even see a can of pinto or black beans going in here. This didn't reheat well, was all hard and nasty, so eat it in one go. And I did cook it on low and it was fine for those of you who have jobs to go to like me. :)

Cut-Out Cookies in a Flower Pot

My only gripe with this recipe is that I thought it was WAY too sweet. We used buttercream icing to decorate these cookies cut into heart and butterfly shapes and baked onto popsicle sticks for my girls' bday party. I used the tip someone else gave and cut two cookies per stick, sandwiching the stick between the two cookies. These baked about 15 minutes and were around 1/2" thick and made about 24 cookies. If you are using the sweet frosting, I suggest cutting way back on the sugar. Otherwise, it tasted good despite the hardness of the cookie which made us nervous (we thought they'd be dry). Will do again with less sugar.

Microwave Peanut Brittle

This recipe will only make half a cookie sheet full, double it if you want a full cookie sheet. I'd suggest quadrupling the recipe for 35 people (which happens to be how many people I'm making for). You will have to increase the cooking time, or do it in different batches. Also, I rinsed my glass bowl in hot water and it cracked right in the sink, so make sure you let your bowl cool before you rinse it.
