I have made this recipe about 5 times and based on the previous reviews, I have always left out the salt. I forgot this last time and I could barely eat it. I started making this recipe before I had ever tried it in any restaurant and when I finally did try a "professional" version, I was happily surprised at how excellent this recipe is. I think the heat is just right. I usually order mine at a medium and this has just the right kick for me. So, this is a 5 star recipe (if you leave out the salt, or just stick to "salt to taste")!
