Day Before Mashed Potatoes

This recipe was wonderful! I made it for Thanksgiving. I doubled the recipe and added 2 tsps of Rosmeary for a little zing. By the next day, when I reheated the potatoes, the rosemary had nicely permeated the dish. We have never run out of mashed potatoes, but this year we did!

Excellent Oatmeal Cookies

This recipe is a great base for some yummy drop cookies. The first batch we just used pecans, and it was ok. The second batch we used butterscotch chips and pecans, for a very yummy result. The third batch we added chocolate and peanut butter chips for a peanut butter cup delight! I also used almond extract in the second batch in place of the vanilla.

Almond Chocolate Coconut Cookies II

The reason we gave these cookies a 4 star rating is that the amount of chocolate called for in the recipe is far too overpowering. We scaled it back to 3 cups and it seemed to allow the almond and coconut flavors to blend in as well. We subsituted 3 cups unlbeached flour + 1.5 cups whole wheat flour and used sliced almonds. Once we got the chocolate ratio right these cookies were fabulous! Quick, easy, and freeze well. A great quick addition to your recipe box.

Award Winning Soft Chocolate Chip Cookies

This is everything a 5 star recipe should be. I substituted, turbinado sugar for the white sugar, and 3 cups unbleached flour + 1 1/2 cups whole wheat flour for the white flour, and I used 1 cup butter + 1 cup butter flavored shortening for the 2 cups butter. I only had chocolate pudding. My husband is not a fan of chocolate chocolate chip cookies, but he really enjoyed these. I will most likely use vanilla next time, but the chocolate was great in a pinch. Oh and we didn't use nuts this time around. I used a small scoop, for uniform cookies, enabling me to get 26 cookies on a 16'pizza stone. Once these cool a bit, the bit of crunch around the edges really compliments the inner chew! Yummo!

Nutty Crispy Sugar Cookies

Great drop cookie! I normally try to make some substitutions to try to put a little good in our goodies. I used 1 cup whole wheat flour and the rest unbleached flour. I substituted trubinado sugar for the white sugar. I substituted cashews for the walnuts, which we added directly to the dough. The kids liked that the cookies do not spread much while cooking, so many can be cooked at one time. (Which also allows for the cooling of many at one time and thus the eating of many. LOL!) We did not roll the cookies in nuts or sugar, for the first batch because we forgot. We were glad we did. These have a shortbread consistency without being too sweet. They freeze well too.

Cowboy Cookies III

This recipe was fair at best. I agree with some of the other comments regarding the lacey consistency. I think the original description says it well, IF you can get them to bake just right. I tried several different times, with no luck. After two batches, I hadn't the energy for a third.

Oatmeal Peanut Butter Cookies

This recipe is very good. I doubled the recipe, and then added 2 extra cups of oats regular, not quick cooking). I also added 2 tsps of Almond extract. I also used crunchy peanut butter. These are very easy to bake. You know they are done when they look wrinkled. Be careful not to move them off the cookie sheet before they cool or they will break apart. But if one should crack, careful move it to the cooling rack and gently smoosh together. When it completely cools the cookie will be "healed" You can get a lot of cookies on a tray as the cookies do not spread much. I got 27 on 16" pizza stone. I use a small scoop so as to have uniform size cookies. Oh and I used unbleached flour except for one cup, which I used whole wheat flour. (Just a little bit of goodness in our goodies.) We make many dozens of different types of cookies for xmas gifts. With as chaotic as life can get with a large family, we only make drop cookies, and only those that look nice, taste delicious, and freeze well. This recipe fit the bill! The kids think chocolate chunks would make an excellent addition to this recipe.

Potato Cheese Soup

One word...WoW! We doubled it, (lg family) and it was a hit. When I read recipe reviews here, I pay close attention to the ones that comment about how their picky eater loved the dish. I have yet to have my daughter love a dish that other finicky children chow on. Well, this recipe is the first time I have had her eat a soup! I have tried many potatoe soups, and this is the one she ate! Aside form that I made a few substitutions. I used reconstituted dry skim milk, a whole red onion (pulverized), and I used low fat swiss and cheddar. I think I may try asome dill havarti next time for a change. This will be a regular on our monthly menu.

Golden Potato Soup

This was a nice change of pace. I used bacon instead of ham. It was more like a heart y stew than a soup so the family was happy! Served this with Breadsticks and salad. Makes for a nice and simple meal.

Chicken Delicious

Easy, simple, and good for hectic days. I used white wine instead of sherry and it was good. My thing is this...I have seen tons of ratings and people say my kid is so finicky and loved this dish...I would serve it to my finicky daughter and no go. My girl eats, cheese, bacon, and sometimes potates...and she is 7. She ate every bite of this chicken and the rice. OMG! I thought she fed it to the cat. hehehe!

Carrot Casserole with Cheese

This was not a combination that my family enjoyed at all. My kids took one bite and said no way! Although my daughter did pick the cheese and eat it. I didn't even eat much more than a bite or 2. Cheese and Carrots just didn't do it for our family.

Bacon Roll Ups I

This is an awesome recipe! There was plenty for all. I made the roll ups and then froze them. I defrosted them in a bag on the counter for about a half hour and then popped them in the oven. They were awesome! I recommend that you make a batch just to keep on hand in case of company. :o)

Great Garlic Knots

OK...I did not use the pre-made dough. I simply made a recipe for basic bread dough. This recipe was woinderful. With one recipe for a loaf of bread I had enough knots to serve 15 people with some left over. They freeze well so you can make ahead and cook right before you need them. The also freeze and reheat well after their initial serving. My daughter liked them very much.
