Artichoke Spinach Lasagna

My husband says this is the best dish I make. I add some shredded roasted chicken, use jarred spaghetti sauce and alfredo sauce (to make it a creamy pink sauce), and also use a layer of ricotta mixed with italian seasoning and parmesan.

Plum Blueberry Upside Down Cake

I was surprised at how good this turned out...didn't have any blueberries so I just used plums. I didn't let it cool before I turned it over so it wasn't very pretty but tasted fabulous. The cake part is yummy....I might try it with other fruits next.

Absolute Mexican Cornbread

Pasta e Fagioli II

Served this on a rainy night and my husband loved it. Used one can of red beans and one can of black beans, used a bit of prosciutto and two slices of canadian bacon, and searched everywhere for ditalini but ended up using whole wheat baby macaroni...it was delicious!

Raspberry Almond Shortbread Thumbprints

The taste of this cookie is a tiny bit too sweet for me but its still so good. I'm supposed to be on a diet and still ate at least 5 a day until they were gone. The jam spreads out a little too much, next time I'll try to leave the dough in a ball shape and press a deep thumbprint to see if it might be a little prettier. Even if I can't get it to be prettier I'm still making these for Xmas this year. :)

Champagne Chicken

This was so easy! Instead of cooking the chicken on the skillet, I put chicken tenders in a pan and sprinkled with black pepper, salt and butter...then put it right into the oven. While the chicken baked (about 20mins), I prepared the sauce. When the chicken was done I put it into the sauce and let it absorb the flavor. I also used fat-free half and half instead and it still tasted awesome. Even better the next day.

Easy Slow Cooker French Dip

This was the first recipe I tried on our new slow cooker. I served it with bread and cheese on top. Also cut up onions and mushrooms and added to the mix with a good beer. Good, but I don't know if I'll make it all the time.
