Brooke's Best Bombshell Brownies

I was a little skeptical because several reviewers called these brownies "fudge-like" and I'm not a fan of fudge, but I figured 500 positive reviews had to mean something so I tried them anyway. These brownies were GREAT! I followed other reviewers' advice and subbed one of 3 c sugar for brown, but other than that followed the recipe exactly. The chocolate chips are what really makes this so amazing. Definitely worth taking the time to sift the flour and cocoa powder so you don't get clumps. I will never buy boxed brownies again!!

Salsafied Chicken and Rice

This was really easy to make and surprisingly good!! I added some diced bell pepper just because I had it, but other than that I followed the recipe to a "t" and couldn't have been happier. Yum!

Cream of Spinach Soup

The only reason I'm not giving this 5-stars is because I did follow other reviewers' suggestions to add cayenne, nutmeg, garlic, fresh onion instead of powder, and parmesan. This recipe is very versatile, I'm sure you could do a lot with it. I even ran out of skim milk (I only got 2 1/4 of the 3 cups needed) and it still came out fine. Yum!!!

Tofu Parmigiana

Followed other users' advice to use flour and spray oil on the tofu before breading. Also baked instead of fried. Next time I'll add mushrooms. Delicious!!

Broiled Tilapia Parmesan

The sauce is to die for here, the tilapia is just a lucky recipient of such yummy sauce. I always add a little paprika and use celery seed instead of celery salt when I make it. Oh, and lite mayo to knock off a couple calories. This sauce is so good that I've used it with a few drops of oil to thin it down as a salad dressing or in pitas. We're talking, "I want to lick the bowl clean" good!

Portobello Penne Pasta Casserole

Absolutely delicious! I've made this several times now (I can't seem to get enough of it!!) I double the garlic, cut the butter in half, and only use 1 3/4 c milk to avoid the sauce getting too runny. I've made it with and without soy sauce and it's good either way. My favorite modification has been a few red pepper flakes for an added kick. So good!!! I will definitely be making this again and again :)

Sauteed Swiss Chard with Parmesan Cheese

I followed this recipe to a "t" and it was FANTASTIC!! The only difference was I used rainbow chard and white onion, just because that's what I had on hand. Not only was it gorgeous to look at, but it was absolutely delicious. I'm the type who eats vegetables because of guilt, not because I like them, and I just gobbled this one down. This is the best recipe I've tried in long time!

Mediterranean Pasta Salad

I followed the recipe to a T with the exception of the tuna (I realized I had packaged salmon, not tuna, so I used that instead). The recipe was pretty good, but not the most exciting thing in the world. The spices give it a nice flavor but there was too much vinegar for my liking. A nice, healthy way to use up some spinach fettuccine.

Summer Nights Eggplants

I was somewhat skeptical of this recipe after reading some of the reviews, but it turned out to be DELICIOUS!! here are the few minor changes i made: 1) precook the eggplant in the microwave so it doesn't soak up so much oil (which i also reduced to 1 1/2 tbsp), 2) i didn't have any bread crumbs so i omitted those completely and found it to be moist and delicious just the same!, 3) i added italian seasonings and red pepper flakes for some zing, 4) as per other recommendations, i mixed feta up with everything else and then topped the whole thing off with mozzarella and feta both. one of the best veg-friendly dishes i've found in a while!
