Chipotle Chicken Chili

Delicious, quick and easy, what more could you ask for in a recipe! I used a rotisserie chicken from the deli and shredded the meat. Since there was so much meat I doubled the rest of the ingredients. The seasoning was great but we like a little more spice so I added two chopped jalapeno peppers. Topped this with fresh cilantro and shredded sharp cheddar. Served with crusty bread and it did the trick for warming me up on a cold winter night!

Fresh Tomato Shrimp Pasta

Delicious, healthy and easy, what more could you ask for? I used whole wheat fettuccine, cut the tomato in half and used dried spices (about 1 tsp.) each as I did not have fresh spices on hand. It is a little bland but with a few shakes of red pepper it wakes right up! This is one of my new favorite recipes, so yummy!

Chicken Continental

Quick, easy and delicious! I used diced chicken because that was all I had on hand, used chicken broth in place of the water and added paprika. Dinner was on the table in 20 minutes.

Gramma's Apple Bread Pudding

Now this is comfort food at its best!! This was delicious and so easy. I've made it with and without the vanilla sauce and I definitely prefer it without. This dish is so flavorful already you can skip that extra work. Just serve with vanilla ice cream if you're looking for a little extra something with this. Although it definitely doesn't need it!

Italian Roast Beef I

This is a fantastic recipe and my new favorite way to prepare a roast! I was nervous about cooking the roast in a kettle on the stovetop but I cannot believe how juicy and flavorful this came out. Gone are my days of making a roast in the oven. The only changes I made were to omit the salt (the bouillion adds enough salt) and I used 1/4c extra virgin olive oil instead of 1/2c vegetable oil. I let this simmer covered on the stove for about 3 hours and it was perfect. The gravy I made from the left-over liquid is an unexpected treat. Thank you for this recipe!!!

Creamy Dreamy Chicken and Spirals Casserole

This was delicious! I added 1/2tsp of fresh ground black pepper a package of frozen mixed vegetables and doubled the pasta. It was a lot of work but this is a new family favorite!

Artichoke & Spinach Dip Restaurant Style

Absolutely delicious! I agree that it is an awful lot of work for 4 cloves of garlic so I just minced my garlic and added it to the mixture. This was so creamy and smooth - love it!

Wow - we loved this! The only change I made was to add a can of green chilis and some red pepper flakes (we like it a little spicier). I served this over noodles with some shredded cheddar on top - wonderful!!!

Penne a la Vodka II

This is delicious but I did make a few changes. I cut the cream in half and used evaporated milk so that it wasn't as "heavy" and added crushed red pepper flakes to give it a little more flavor. Also, I did not like the idea of using whole peeled tomatoes so I used crushed instead. It is wonderful! I would give it a 5 but since I strayed from the original recipe I am giving it a 4.

Drip Beef Sandwiches

Yummy!!!! This is a family favorite at my house. I use a tea ball to hold the spices instead of a coffee filter and put the roast in the crockpot. It's a wonderful smell to come home to at the end of the day. I halve submarine buns, put some beef on it, top it with provolone and lightly broil it until the cheese is bubbly. Dip the sandwich into the juice - heavenly! We use the leftovers to make beef burritos and I save the juice to make beef stew. What a wonderful recipe!

Swiss Chicken Casserole I

This is a good basic recipe but it needed something to give it a little more flavor. I took the suggestion of a previous reviewer and added a can of green chiles to the soup mixture and it was just what this recipe needed! The best part was that it was better the next day!

Rainbow Pasta Salad I

Delicious!!! I made this recently for a bbq and it was the first thing to go - yummy! I did take the suggestion of a few other reviewers to make this suite my family's taste. I only added 8oz of italian dressing, added halved cherry tomatoes and cucumbers and omitted the mozerella cheese for cubed cheddar. This is a great basic recipe that can be altered to suite your own taste!

Waikiki Meatballs

So easy!!!! I used frozen turkey meatballs instead of making my own and had this on the table in under 25 minutes. Otherwise the only change I made was I omitted the green pepper (not a fan of peppers) and used broccoli instead. This is a new family favorite!
