Italian Roast Beef I

Hmmm...I didn't think this was all that it sounded like it would be. Smelled great cooking. I used veal, but was not too big on the flavor...don't know what it was, too herby maybe...?

Peanut-Ginger Marinade

Oh my gosh...YUM! I LOVED this marinade and so did everyone else in the house...and all the neighbors that smelled it and came over. I made good old kabobs...extra...and was disappointed that there were no left overs. Guess I have to make more!

Yellow Split Pea and Frankfurter Soup

My husband loved this soup...something about the hot dogs that magically makes split pea soup more appealing! This is the first time that all of my split pea soup leftovers got eaten. Guess that means I have to make it again.

Tofu Peanut Stir-Fry

I love peanut sauce and asian food...but this is a good example of why I go out to get it! What a nightmare! The tofu was sticking and kept falling apart, keeping it from getting crisp on the outside. The flavor rocked...but my inability to cook the tofu ruined it all!

Oven Roasted Red Potatoes and Asparagus

I love herbs so I followed the recipe, even after I read the comments to scant on them. It was kinda like chewing on twigs by the end of the meal. It would have been just as flavorful with about half the amount I think. Also, by the time my taters were done my asparagus was over-cooked. May need to change cooking times to fix this...I'll try again though...definitely has potential!

Green Olive Chicken II

This was good! Very juicy chicken. I read other reviews and omitted the salt. I wish I hadn't though. I think it would have been better with it. The sauce was still very watery after the rice and chicken were done cooking so I added some minute rice to absorb the excess moisture. It worked great!

I thought this was EXCELLENT! My husband and I love the Worthington brand Big Franks and they work great for this recipe (so do the Veja-links). I will definitely use this recipe often!

Easiest Eggplant

This eggplant is AWESOME!! It is so crunchy on the outside, and tender inside. Even my husband LOVES it and he usually shudders everytime I bring home an eggplant. This recipe is so easy that I have used it numerous times already!

Basic Flaky Pie Crust

My first time making homemade pie crust. I was intimidated because my mom told me the first time she made pie crust it ended up getting thrown into the wall. It was good...oh so flaky!!! I love breads and crusts and I get picky...oh this was good! I rolled it out on a piece of foil (or parchment) making it easier to transfer to the pie pan without breaking. I will definitely hold on to this recipe, it was so easy!!!
