Dutch Apple Dessert

I made this dessert for company tonight, and I thought it was delicious! I used unsalted butter and added just a dash of nutmeg. I will definitely be making this again!

Meatball Nirvana

I only made a half-batch and used ground turkey instead of beef, but these were delicious! The red pepper flakes gave it a little kick. If making for children, I would probably not use as much. Overall, great recipe. Thanks!

Southwestern Egg Rolls

Absolutely loved it!!! The great thing about this recipe is that you can switch up the vegetables depending on what you have on hand, just make sure you're tasting along the way to measure spice/flavor. Instead of chicken breast I used canned chicken, and then just increased the vegetables to compensate for the additional chicken. I used swiss chard instead of spinach as well as fresh carrots, corn, and anaheim peppers. If I had more tortillas, I easily could have made a dozen rolls (maybe double if I used less filling in each one). I froze some of the rolls for later, but baked a few fresh at 425ยบ for 10-20 minutes on a wire cooling rack on top of a cookie sheet (to allow for air flow) until lightly browned and crispy. Next time I'll definitely make avocado ranch to go with!

Baking Mix Blackberry Cobbler

For requiring so few ingredients, this cobbler was awesome! I added some cinnamon to the blackberries, and cut the water back to 3/4 cup. Served warm with vanilla ice cream. Thanks, AshleyElaine, for the recipe. I'll definitely be making this again!

Mock Coconut Pie (Spaghetti Squash Pie)

I followed the recipe (except no crust) and it was just ok. Maybe I beat my eggs too long, not sure. Will maybe try again next time I have extra squash.

Poor Man's Hamburger Steaks

I loved this dish! For the most part I followed the recipe, but like some other users I dredged the patties in a flour/saltine mix and then browned in a skillet before baking. Served the mushroom gravy on the side rather than baked with the patties, and garnished with fresh chives from the garden. I'll definitely be making this again!!!

Baked Spaghetti Squash Lasagna Style

This is a great recipe as is, or modified to your liking. I added some ground beef to make it more filling for a main dish, and I didn't have any olives so I left those out. I don't measure spcies, just threw in amounts to taste. As for comments about it being runny: if you cook it in the squash shell, just poke holes in the shell to allow for drainage. I Will definately be making this again!

Grandmother's Buttermilk Cornbread

I followed the recipe as directed, except I didn't have any buttermilk (so I used 1 cup milk + 2 T. Vinegar instead). I made muffins and baked for 15-18 minutes. They turned out great... This recipe is a keeper!
