Absolutely loved it!!! The great thing about this recipe is that you can switch up the vegetables depending on what you have on hand, just make sure you're tasting along the way to measure spice/flavor. Instead of chicken breast I used canned chicken, and then just increased the vegetables to compensate for the additional chicken. I used swiss chard instead of spinach as well as fresh carrots, corn, and anaheim peppers. If I had more tortillas, I easily could have made a dozen rolls (maybe double if I used less filling in each one). I froze some of the rolls for later, but baked a few fresh at 425º for 10-20 minutes on a wire cooling rack on top of a cookie sheet (to allow for air flow) until lightly browned and crispy. Next time I'll definitely make avocado ranch to go with!
