Guacamole

Will try to medium salsa (drained)instead of the tomatoes next time for a little more flavor. Unless you hate cilantro, don't skip it!

Nothing over the top, but really good! Like others, I had waaaay too many crushed waffers. You only need 1/3-1/2 of the box. Cooked in a water bath for 17 minutes, then turned off and opened the oven, let them sit for another 30 min.

This was good, but there was nothing overly special about it. Point to remember~ some spuds have more moisture than others. If you don't use the reds in the recipe, you may need to adjust the amount of flour.

Suki's Spinach and Feta Pasta

Great recipe. I added a chicken breast, used canned tomatoes, and used Kraft "Mediterranean" crumbles. Next time I'll use strictly feta and double the spinach. Remember to use a LARGE pan, especially if you add extras.

Slow Cooker Roast Beef

Very simple to make, I used low sodium onion soup mix and regular soy sauce, turned out very good in about 7 hours on low setting.

Onion Rice

This rice was fine, but nothing spectacular...I couldn't really tell that I spent the extra time and ingrediants on it as opposed to just making Rice A Roni. I don't think I would make again.

Roast Beef with Coffee

This was pretty good, but mine did turn out a little dry. I cooked on high instead of low, but I'll also have to try the vinegar tip in the other reviews next time. It was in serious need of salt, so I added a few splashes of soy sauce for the last 2 hours, seemed to do the trick.

Slow Cooker Chicken Cordon Bleu

Based on the previous reviews I waited until the last 1-2 hours before I put the cheese and stuffing in, and it turned out great! If you use larger chicken breats, it's a little hard to serve out of the crock-pot, so next time I may just cube the chicken and ham.

Pupu Balls

I hate to give a bad reveiw, but I followed this recipe exactly, and the meatballs did not turn out well. They fell apart when marinating (I think it's because there was too much onion) and the taste was VERY salty.

Spinach and Tortellini Salad

Chocolate Peanut Butter Cups

These were very good, but very messy to make. I used milk choc chips like the recipe stated, but the melted chocolate didn't spread well. I added a little milk to the melted choc and re-heated for about 10 seconds. It made it much easier to spread. I'm not sure how long it takes to set without using the milk, but I put mine in the fridge for about 30 minutes for the chocolate to set.
