Bean Quesadillas

These were better than any I've had in restaurants. I added some spices to make it a bit hotter, and I baked the quesadillas instead of frying. Quick to make and easy to clean up.

Bean & Pasta Soup

I used this recipe to get rid of some hamburgers I had in the freezer. Of course, I had to make do with the ingredients I had on hand, so I used onion soup mix, fresh tomatoes, and added some frozen veggies with the pasta (macaroni). Nevertheless, it turned out really great. I served it with warm naan. I can't wait to have the leftovers for my lunch tomorrow once the flavours really set in. Yum!

Amy's Mexican Soup

This was so good we even had seconds. I reduced it for two people. We loved the sour cream and cheddar. I simplified it but skipping the blending step since we like our soup chunky anyway. I added some fresh tomatoes and a little less canned ones. I also added some frozen veggies and spiced it up a bit more since we like our food hot. We'll definitely be having this again. :-)

Grilled Stuffed Portobello Mushroom Caps

This was a huge hit. Had to bake it because I didn't have a grill, but it turned out great. And so quick. First time working with portobellos, but it won't be the last.

2-Step Cheesy Pasta Twists

I was surprised at how good this was. I had to use different brands, but the ingredients were the same. I liked the flavour of the croutons. It was also really quick to cook and easy to clean up. It great as it is, but it would also be good as a base.

The Best Barbequed Chicken Ever

Fuzzy's Chipotle Flank Steak

Five stars from both of us for this one. Perfect amount of heat for us. We used a can of chipotle peppers in adobe sauce. Strongly recommend cooking this outside though. We used the indoor grill, and the smoke gave us coughing fits.

Turkey and Provolone Sandwiches

This was a great lunch. Substituted spinach and left out the olives. Spread mustard on the rolls. Will definitely make this again. Might add peppers next time.

Basque Salad

This is delicious and very versatile. You could probably substitute with other veggies if needed. I added hot pepper just to give it a bit of heat for our tastes.

Barbeque Chicken

Balsamic and Rosemary Grilled Salmon

This was fabulous. I didn't have sea salt so I just used regular salt. I also used dried rosemary. I poached the salmon on the stove top with the marinade and a bit of water since I don't have a grill. The flavour of the marinade really came through, but it didn't overpower the salmon.

Basil Pan-Seared Scallops over Pasta

After reading some of the comments about the lack of flavour, I decided to add a hot pepper just in case. It turned out really great. I did reduce the oil and butter a bit though. I also decided to go with sea salt. Very quick and easy.

Very similar to what we have when we go to North Africa. It had great heat. We had it with lamb burgers. I can't wait to try it tomorrow with tuna.
