Balsamic and Rosemary Grilled Salmon

This was fabulous. I didn't have sea salt so I just used regular salt. I also used dried rosemary. I poached the salmon on the stove top with the marinade and a bit of water since I don't have a grill. The flavour of the marinade really came through, but it didn't overpower the salmon.

Acapulco Chicken

Spicy Chicken Soup

My husband usually makes the chicken soup for me when I'm sick, but since he was away this time, I was on my own. I tried this recipe and it was delicious; it really made me feel better. I didn't have any canned tomatoes so I diced up a couple of fresh ones and added two hot jamaican peppers.

Very similar to what we have when we go to North Africa. It had great heat. We had it with lamb burgers. I can't wait to try it tomorrow with tuna.

Eggplant and Lamb Stew

Wonderful! My husband's usually the one who makes the Middle-Eastern dishes, but since he's away I decided to give this recipe a try. Eggplants make me nervous, so I just used one. Although I love garlic, I was a bit wary of using 10 cloves, so I used 5 and then threw in a hot jamaican pepper for some heat. I let it simmer for just over an hour. The meat was so tender I didn't need a knife to cut it. I served it with rice, but I'm sure it would also be good with couscous. I can't wait to surprise my husband with this one when he gets back. We loved this one. One pot meals are such a breeze to clean up after. It was hearty and delicious. I didn't have a big enough pot, so I cut down a little bit on the water. It was probably a bit more concentrated than it should have been, but it was still yummy. I didn't have any vermicelli so I used orzo instead. I don't think the eggs added anything, so next time I will leave them out. They weren't bad, but I don't see the need for the extra cholesterol since there was already lamb. I had to use lamb chops, but they turned out very tender. I can't wait to have the leftovers tonight.

Happy Shrimp

I used chicken bouillon instead of wine and increased the amounts of liquids to have enough sauce to cook the pasta in. I also increased the amount of cayenne for extra heat. I had to simmer it longer than planned, but it turned out amazing. Between the two of us, we polished off the whole thing. Next time, I'll definitely make more. I suspect this would be divine as leftovers. :)

Jambalaya With Shrimp

Fantastic! This was my first time making jambalaya and I loved it. As per some of the reviews, it needed extra liquid for the rice, but since I didn't have extra broth, I just added water as needed (about one and a half cups). I spiced it up with half a habanero, a little cayenne and some red pepper flakes. So easy to make and I only had to dirty one pot :)

Kathy's Roast and Vegetables

Great recipe! Meat was moist and tender. So simple to make and so much flavour. I rubbed fresh garlic into the meat instead of the powder, but other than that I didn't change a thing. The potatoes took a bit longer to cook so I recommend not cutting the chunks too big. I will definitely make this one again.

Hamburger Casserole

Unfortunately, after gathering all of the ingredients, I realized that I didn't have a baking dish I could use in the oven. I had to adapt, so I cooked up the beef, onion and celery in a pot with the taco seasoning, salt, pepper, and hot pepper flakes. Once the beef was cooked, I added the tomatoes and salsa, and simmered a bit. I added about a cup of water, kidney beans and corn. Finally, I through in the egg noodles and let them cook in the juices. I served it up with a dollop of sour cream, crushed tortilla chips and shredded cheese on top. It was so good, my husband and I each had two bowls! The best thing was, since I did have to modify the recipe, I had barely had any dishes to clean up at the end. :)

This was a great change from my usual rice. The flavour was just right for a side dish, not too overpowering, but tasty just the same. Very easy to make, it didn't really take that much more time.

Hamburger Soup III

This was a great base. I didn't have any broth so I added some water and taco seasoning to get the liquid I wanted. I cooked the meat and onions first and then simmered with the pasta and frozen veggies til the pasta was cooked.

Quick and Easy Chicken

Great recipe! Lots of flavour, sweet but not too sweet. I decided to use 2 bone-in chicken breasts, but I boiled them for a little bit beforehand to make sure they would cook through. I made the amount of sauce that the recipe suggested and I found there was just enough to coat the chicken. I would probably add a bit more sauce though next time I make it. Didn't have any lemon juice on hand, so I used a half a lime and it was still delicious.

A Very Intense Fruit Smoothie

Bean Quesadillas

These were better than any I've had in restaurants. I added some spices to make it a bit hotter, and I baked the quesadillas instead of frying. Quick to make and easy to clean up.

Bean & Pasta Soup

I used this recipe to get rid of some hamburgers I had in the freezer. Of course, I had to make do with the ingredients I had on hand, so I used onion soup mix, fresh tomatoes, and added some frozen veggies with the pasta (macaroni). Nevertheless, it turned out really great. I served it with warm naan. I can't wait to have the leftovers for my lunch tomorrow once the flavours really set in. Yum!

African Curry

We really enjoyed this recipe. I added more salt and curry to our taste. I also threw in some red pepper flakes and some cayenne for some more heat. I didn't have any coconut milk so I used 3 tbsps of yoghurt instead and added a bit of lime juice instead of lemon.

Alabama Mud Cake

This recipe is awesome for people like me who can't bake and who don't have the necessary equipment. There was no mixing required. It was nice and moist, which is how I like my cake. I'm not a huge fan of cherries, so I was worried about them, but they really didn't overpower the cake at all. It wasn't too sweet or rich. The only thing I changed was I had to use milk chocolate chips instead of mint ones because I couldn't find any in my grocery store. It's my turn to bring a cake to work, and I'm pretty sure I'm going to take this one.
