Balsamic and Rosemary Grilled Salmon

Reviewed: Jan. 7, 2008
This was fabulous. I didn't have sea salt so I just used regular salt. I also used dried rosemary. I poached the salmon on the stove top with the marinade and a bit of water since I don't have a grill. The flavour of the marinade really came through, but it didn't overpower the salmon.

Cottage Meatloaf

Reviewed: Nov. 10, 2005
This was my first attempt at meatloaf, and it turned out wonderful. It's also the first time I have made something that tasted better than what my mom used to make. I didn't have enough ketchup, so I used about a 1/4 cup in both the meat and the sauce and added an extra 1/4 cup of tomato juice in both to make up for it. I was worried that it would be too runny, but it wasn't. It wasn't too sweet either, and it held together really well. So good, I had seconds :)

Baked Scallops

Reviewed: Dec. 22, 2007
Very easy and quick to make. I cooked it in one casserole instead of two to save on dishes. I adjusted the spices a bit by adding extra pepper, and some garlic and chili powders, just to suit our fondness for heat. It was yummy!

Jambalaya With Shrimp

Reviewed: Nov. 22, 2005
Fantastic! This was my first time making jambalaya and I loved it. As per some of the reviews, it needed extra liquid for the rice, but since I didn't have extra broth, I just added water as needed (about one and a half cups). I spiced it up with half a habanero, a little cayenne and some red pepper flakes. So easy to make and I only had to dirty one pot :)

Baked Tomatoes and Mozzarella

Reviewed: Jul. 5, 2010
The flavour was fine, but the cooking time was way too long for my liking. I cranked the heat up to reduce the time.

Fabulous and Easy Guacamole

Reviewed: Nov. 13, 2005
This was really good. It was my first time making guacamole so I didn't know what to expect. I used the whole shallot and the whole jar of sauce since there would have only been a little bit left anyway. I would make this again, but next time I will add the lime juice and salt that another reviewer suggested just to see what the difference is.

Avocado and Black Eyed Pea Salsa

Reviewed: Jun. 25, 2010
This was very good. I couldn't find black eyed peas, so I substituted black beans. I'll definitely make it again, but next time I'll spice it up with with some jalapenos or chili peppers to add some heat for us.

Fabulous. The lamb was so tender. I was planning to have leftovers, but it was so good we ate the whole thing.

Abalos-Style Hamburger Soup (Picadillo Filipino)

Reviewed: Sep. 11, 2009
I thought this was a really good base recipe. I didn't have any fish sauce so I substituted with some chili powder. We like our food spicy anyway. I also added some celery because I had some to use up. I just threw everything in a pot and let it simmer. Really simple and really easy to clean up.

Dirty Piggy-Back Lamb

Reviewed: Jan. 20, 2006
This was a tasty recipe. I made the mistake of buying the thick bacon though, so it took too long to get crispy. I think it would taste better with thinner bacon. I did cook the mushrooms first; however, I ended up throwing them in the pan with the red pepper and onions to heat them back up again at the end. So I would suggest cooking them with the lamb when it's almost done. It would save a bit of time.

Bermuda Fish Chowder

Reviewed: Sep. 14, 2008
I had to make do with the ingredients I had on hand, and I didn't have enough clam juice. I made up the difference with chicken broth. I think it would have been much better if I had had enough juice. I did add extra seafood though (bar clams, scallops, crab, shrimp) and used tilapia instead of snapper, since I didn't have any.

Balinese Chicken Wings

Reviewed: Dec. 23, 2007
I modified this recipe slightly to marinade chicken thighs and it turned out wonderful. Of course, they took a bit longer to cook, but they were worth the wait. I left out the sugar because of personal tastes and replaced it with about a tablespoon of tomato juice. Also added some extra pepper. The chicken was really juicy and tender.

Ainaa's BBQ Chicken

Reviewed: Dec. 22, 2010
I had scaled this recipe down for two people, and boy did I regret that. It was soooo delicious, we really wished we had enough for seconds. I actually baked it in the oven in the sauce since we didn't have a bbq. I will definitely make this again. And probably soon.

Amber's Devils on Horseback

Reviewed: Nov. 3, 2005
This recipe was nice and light. After baking the scallops for a few minutes, I drained them. Then I added the ingredients. As some of the reviewers found it to be too lemony, I used regular salt and pepper instead of lemon pepper and squeezed in a little less lemon juice.

Rotisserie Chicken

I don't have a bbq, so I baked this in the oven. It was a huge hit. Way better than the prepared rotisserie chickens we usually get.

Bangan ka Bhurta (Indian Eggplant)

Reviewed: Jan. 27, 2008
It seemed like a bit of work so we just simmered the ingredients together on the stove til cooked. We increased the cayenne to our taste and added garam masala per another review. I don't know what the real recipe was supposed to taste like never having had it before, but ours was pretty tasty. My husband devoured it.

Mom's Chicken Paprika

Reviewed: Jan. 8, 2006
I was getting ready to make this dish when I realized I didn't have any paprika. I figured I would keep going anyway, and substituted cayenne for the paprika, since some people thought it needed a bit of spice. I'm glad I did; it turned out terrific! I used bone-in chicken breasts. Normally I have trouble getting them to cook all the way through, but these were perfect. The only problem I had was with the sauce. I reduced the recipe to 2 servings and I found there wasn't enough milk. It turned out fine though, I just kept adding a little at a time until there were no lumps. Sorry I don't know how much I ended up adding. I will definitely make this again, although next time I'll make sure I have some paprika. :)

Bob Evans® Au Gratin Potatoes

Reviewed: Feb. 19, 2009
I was a bit skeptical about this recipe, but it turned out great. Next time I make it, I'll add a bit of spice. I think I'd add some more parmesan too, since I couldn't taste it.
