Acapulco Chicken

This recipe was nice and light. After baking the scallops for a few minutes, I drained them. Then I added the ingredients. As some of the reviewers found it to be too lemony, I used regular salt and pepper instead of lemon pepper and squeezed in a little less lemon juice.

Spicy Chicken Soup

My husband usually makes the chicken soup for me when I'm sick, but since he was away this time, I was on my own. I tried this recipe and it was delicious; it really made me feel better. I didn't have any canned tomatoes so I diced up a couple of fresh ones and added two hot jamaican peppers.

Becki's Oven Barbecue Chicken

I didn't have any onion powder so I chopped up half an onion instead. The recipe was good, but a little sweet. I think I will try cutting out some of the sugar next time or spicing it up to make it a bit hotter. Also, I think I would cut back on all the ingredients since I cooked a few extra wings and there was still plenty of sauce left over.

Cottage Meatloaf

This was my first attempt at meatloaf, and it turned out wonderful. It's also the first time I have made something that tasted better than what my mom used to make. I didn't have enough ketchup, so I used about a 1/4 cup in both the meat and the sauce and added an extra 1/4 cup of tomato juice in both to make up for it. I was worried that it would be too runny, but it wasn't. It wasn't too sweet either, and it held together really well. So good, I had seconds :)

Dianne's Crab

This recipe was tasty, cheap and easy to make. I made a complete meal in less than 30 mins. I sautéed frozen veggies with the garlic before adding the crab. I didn't have enough imitation crab, so I added a can of crab too. As another reviewer suggested, I used lemon juice and pepper. I also added a bit of salt and replaced the romano with parmesan. I tossed it with some pasta. I would make this again.

Eggplant and Lamb Stew

Wonderful! My husband's usually the one who makes the Middle-Eastern dishes, but since he's away I decided to give this recipe a try. Eggplants make me nervous, so I just used one. Although I love garlic, I was a bit wary of using 10 cloves, so I used 5 and then threw in a hot jamaican pepper for some heat. I let it simmer for just over an hour. The meat was so tender I didn't need a knife to cut it. I served it with rice, but I'm sure it would also be good with couscous. I can't wait to surprise my husband with this one when he gets back. Fabulous and Easy Guacamole

This was really good. It was my first time making guacamole so I didn't know what to expect. I used the whole shallot and the whole jar of sauce since there would have only been a little bit left anyway. I would make this again, but next time I will add the lime juice and salt that another reviewer suggested just to see what the difference is.

Jambalaya With Shrimp

Fantastic! This was my first time making jambalaya and I loved it. As per some of the reviews, it needed extra liquid for the rice, but since I didn't have extra broth, I just added water as needed (about one and a half cups). I spiced it up with half a habanero, a little cayenne and some red pepper flakes. So easy to make and I only had to dirty one pot :)

Kathy's Roast and Vegetables

Great recipe! Meat was moist and tender. So simple to make and so much flavour. I rubbed fresh garlic into the meat instead of the powder, but other than that I didn't change a thing. The potatoes took a bit longer to cook so I recommend not cutting the chunks too big. I will definitely make this one again.

Linguine with White Clam Sauce

Unfortunately, I didn't like the sauce and ended up throwing it out. It didn't thicken at all, and the wine flavour was way too strong. I also don't know what the purpose of using both oil and butter is.

Mom's Chicken Paprika

I was getting ready to make this dish when I realized I didn't have any paprika. I figured I would keep going anyway, and substituted cayenne for the paprika, since some people thought it needed a bit of spice. I'm glad I did; it turned out terrific! I used bone-in chicken breasts. Normally I have trouble getting them to cook all the way through, but these were perfect. The only problem I had was with the sauce. I reduced the recipe to 2 servings and I found there wasn't enough milk. It turned out fine though, I just kept adding a little at a time until there were no lumps. Sorry I don't know how much I ended up adding. I will definitely make this again, although next time I'll make sure I have some paprika. :)

Nanny's Spaghetti Sauce

A simple, tasty recipe. I used 5 fresh tomatoes instead of canned and, after simmering for 30 minutes, the consistency was perfect. Not too runny, not too thick. Next time, I will try adding some ground meat.

Dirty Piggy-Back Lamb

This was a tasty recipe. I made the mistake of buying the thick bacon though, so it took too long to get crispy. I think it would taste better with thinner bacon. I did cook the mushrooms first; however, I ended up throwing them in the pan with the red pepper and onions to heat them back up again at the end. So I would suggest cooking them with the lamb when it's almost done. It would save a bit of time.
