Sopapilla Cheesecake Pie

This is amazingly good and simple to make. When I was shopping for the ingredients, I was pleased to find that Pillsbury now offers "single sheet" crescent roll dough so it makes it even easier to make a recipe like this. No need to use a rolling pin roll the perforated pieces together. Like other reviewers, I did not feel the need to put honey on after baking. Very sweet and yummy without it. This will be my new go-to recipe for staff breakfast potlucks!

Asparagus and Cashews

Loved it! Like others I reduced each of the oils by half and it worked just fine. I also cut the asparagus into smaller pieces for ease of eating and serving. I intend to try this with pea pods and broccoli. Use your imagination and you can't go wrong. Thanks for a great and easy recipe!

Oven Baked BBQ Ribs

This is a very good recipe! I am all about simplicity so I changed a few things about the preparation. I used a bottled BBQ sauce instead of making my own. Rather than browning the ribs, I simply put them under the broiler until brown, then I covered them and let them cook for 2 hours. During the last hour, I uncovered the ribs and basted them every 15 minutes. They came out quite tasty without all the fuss of flipping them. This is definitely a keeper!

Manicotti Italian Casserole

This is a great starter recipe and easy to make additions and modifications. I don't like jar spaghetti sauce so I always end up adding fresh herbs like rosemary or basil along with garlic to make it taste more homemade. I halved this recipe and it was perfect for a family of 4! Adding mozarella to the pasta as well as on top was a good suggestion from another reviewer.

Iced Pumpkin Cookies

Just made these and LOVE them! I am positive they would be perfect as is but I did make the following changes. I used half a cup brown sugar and the rest white rather than all white. Also used equivalent (3 tsp) of pumpkin pie spice in place of the individual spices cause honestly, I'm lazy! I added approx. 1/2 c. chopped pecans which added a nice flavor and crunch to balance the cakiness of the cookie. Finally for the top, rather than the icing I used a whipped cream cheese frosting from the store. It was lighter than traditional frosting and added the right amount of sweet. Personally I love the fact that they are more of a "muffin top" because I frequently have breakfast staff meetings that we bring things to share and these will be perfect with a cup of coffee. One final thought, to help with the sticky dough, I refrigerated it and used a cookie scoop (looks like mini ice cream scoop) to make them more uniform in size and easier to handle.

Baked Potato Salad I

YUMMY!! I did make a few slight changes based on what other reviewers had tried. I used half mayo and half sour cream and left out the olives cause it just didn't seem to fit with the recipe. I only had small red potatoes on hand so I boiled those whole with skin on and then smashed into large chunks before adding to the other ingredients. Since I boiled the potatoes until they were soft, I was able to cut back on the amount of cooking time to 30 minutes which allowed all the ingredients to melt and heat through. I don't think I will add any salt next time because the bacon added enough salt. This recipe is definitely a new favorite way to make potatoes. I am also anxious to try it as a traditional cold salad as some have suggested.

Tex-Mex Beef and Cheese Enchiladas

This recipe was just "o.k." My family was crazy about it. Amazingly enough even with all the spices added it was rather bland...maybe add more salt. The recipe says the flour is divided but I could never figure out why so I added the whole half cup to the 2 cups of water. The meat sauce turned out fine but the enchiladas stuck to the bottom of the dish. Maybe put some meat sauce on the bottom before putting in enchiladas and then pour remaining over top. Interesting idea for enchiladas but probably won't be a staple in my home.

Slow Cooker Chicken Taco Soup

Loved it!! I'm a working mom and this was soooooo easy. I didn't have the exact beans called for in the recipe so I put in whatever was in my pantry, kidney and white beans. They worked just as well. Made this for a girls night out and they all wanted the recipe. Definitely adding this one to my collection.

Rosemary and Peppercorn Chicken

Very easy and quick, especially if you're a working mom. Looks like you spent a lot of time. It was bland as other reviewers mentioned so I would add a little salt. Also decreased butter by half. Would make again.
