Mom's Stovetop Pork Ribs

The water boiled out in about 30-35 minutes for me. I think those that didn't get the water out were on low simmer. She says medium boil with lid off which is fairly vigorous. I used 1 T dried parsley and 1 T dried cilantro and 4 fat cloves of garlic and all the other seasonings the way they were written. I had 2 lbs. of boneless country spare ribs. The soy was over powering - VERY SALTY. The other seasonings were good. I would use 1/4 cup of soy at most next time or maybe even less and add 1/4 cup red wine or marsala. I love cooking method - fun and easy. It took about 2 minutes or less to brown once the water was gone. I had seasoned my pan with oil in the beginning on sides as well as bottom and I added a little more olive oil on the browning time. My pan cleaned up surprisingly easy. In the meantime, I boiled some potatoes with a a little skin left on them with a touch of olive oil and 1 clove garlic (3 reg. size yellow potatoes) and mashed them with a little (2 T) half and half/milk and sprinkled some dill. That made a nice complimentary dish.

Simply Elegant Steak and Rice

This was quite good and a great way to use round steak. My husband liked it and I will make it again. I used 2 T Worcestershire, 2 t garlic, 1+ cup sherry, and 2T olive oil for the marinade. I threw in some Italian Seasoning during the marinade with real garlic. I marinaded about 3 hours because I had the time. I did use 1 can cream of mushroom soup. I did not use the liquid in the mushroom can (I drained it) and I didn't need it. If I were to add water I would mix 1/2 c beef broth in it but with the extra sherry I added, I had enough liquid. I simmered low for 45 min. and then added frozen peas for an additional last 5 min. (50 min. total cook time.) Although it was very good and I did add an onion, next time I might add a little onion soup mix for additional flavor. We used rice but also would be good with fettucine noodles or like a stroganoff.

Fresh Cherry Crisp

The cherry crisp for very tasty. I did not give it a 5 only because I would totally the 1/2 cup of shortening unnecessary. That made it too oily and did not add to the flavor. The half cup of butter would have been the right amount in my estimation (without the shortening part). I would also increase the oats to 1 1/4 cup because it did not completely cover the top of the pan. I did add chopped walnuts to the topping. Overall, very tasty and easy.

Frozen Cranberry Salad

This was excellent. The cranberries are the key ingredient and I happened to have a bag left in the freezer from last holiday season. I had a bag of frozen mixed fruit that had some pineapple in it as well as peaches, strawberries, mango so I used that instead of the straight pineapple. I used about 40 ounces of fruit instead of 20 ounces and thus a 13x9" pan. I used 1 cup cream and then whipped it. Otherwise, I followed the recipe. My husband loved it and we decided to make it for some company next week. It is good enough for guests and you could easily serve it as a dessert. I would probably use a little less marshmallows next time, but very yummy! Thank you.

Venison Tequila Chili

It was very tasty. We made it to specifications just to try it. My husband loved it. I even forgot to top it with cheese. Next time, because I like to experiment, I'll probably add some green peppers and top with sour cream and grated cheese. I think the tequila and the orange juice really do add something. Very nice recipe.
