Roasted Garlic Cauliflower

I really liked this--something different from the regular steaming. I thought there was plenty of garlic! I may try cutting back the garlic and adding some shredded cheddar to get the kids to eat it better next time.

Carrot Cake III

Made this cake yesterday and it's really good. I prefer carrot cakes without pineapple. I think next time I will make it double layer (just looks prettier!). I would also recommend toasting the pecans first--both for the cake and the frosting.

Chicken Pot Pie IX

Wow - I found a recipe to replace the Pot Pie I've been making for years! The only I usually make calls for cream soup (chicken & mushroom which I'm sick of using! I made a few changes so those who don't like it when people make changes and then give the recipe a 5: STOP READING NOW! I added 2 small potatoes that I diced and pre-cooked in the microwave. I had almost 2 lbs. of chicken breasts, which I boiled in chicken broth. I then scooped out the chicken and added the veggies (I didn't want to over-cook them w/the chicken). I doubled the recipe (with the exception of the celery seed), and I ended up with enough to make 3 pot pies. You definitely don't want to double the sauce if you're using store bought crusts (the ones already formed). My family loved it, and it was a great way to get my kids to eat veggies! And I have two frozen pot pies to cook at a later time! Oh, you do have to watch the cooking time--I had pre-cooked the bottom crust for 7 minutes, and I ended up taking the pot pie out sooner b/c it was browning too fast.

Quick and Easy Alfredo Sauce

Yummy! I didn't have any cream or half and half so I decided to give this sauce a try for our Shrimp Fettucini tonight. It was delicious! It definitely does not have a strong cream cheese flavor, which was my main worry. My only complaint was that it was still a little 'chunky' even after melting together on low and slowly adding the ingredients (I did use 1/3 less fat cream cheese). But the lumpy texture is not that noticable because your busy shoveling it into your mouth! We topped the pasta, sauce and shrimp with diced tomatoes... great meal.

Korean BBQ Chicken Marinade

Wow, wow, wow! I even made the recipe wrong and it came out fabulous! I forgot to cook it before marinating--I was in a hurry and just focused on the ingredients. Anyway, I halved the recipe for 3 large chicken breasts, which I had pounded flat. I then threw everything in a bag and marinated for a full day. Then we grilled it up. The chicken actually tasted like thigh meat because it was so tender and flavorful. The only (other) change I made to the ingredients was to add pepper flakes in place of paste, and I threw in a chopped green onion and some some minced garlic. Wow--I wonder how it would turn out if I actually cooked it(?) My husband loved it!

Chicken and Cheese Crescents

I chose this recipe because I wanted to use leftover chicken and some crescent rolls and I didn't have any cream cheese. They were surprisingly pretty good. I halved the recipe. I also mixed the chicken, cheese, and some of the soup (so it would adhere)then pre-cooked the stuffed crescent rolls for about 20 minutes. I should have cooked them for longer because they were still a little gooey. Then I added the rest of the soup and cooked for another 10 minutes. Not bad for a quick meal...

Breakfast Casserole III

I made this with two large baking potatoes (cut into chunks, boil in microwave until tender, then pan fried). I had plenty of potatoes. I thought it was was pretty good and a nice change for the usual, but my family prefered the Egg and Sausage casserole with the cresent rolls as a crust.

Bev's Orange Chicken

We didn't care for this recipe. I agree with a few of the other reviewers who said the onion mix was too over-powering. If you think about the fact that you're only adding a whole packet of salty seasoning to only a cup of oj (plus 1 TB soy),then you know it's going to be concentrated.

Egg Salad Sandwiches

Very good egg salad. I halved the recipe, then also haved the mayo amount (I used 1/2 lite mayo & 1/2 lite miracle whip). There was plenty of sauce mixture for the eggs. I also added green onion instead of dried. This makes for a great ww meal--3 points per serving, plus whatever bread you use.

Raspberry and Almond Shortbread Thumbprints

These cookies received a thumbs-up from my husband! I didn't realize I was out of almond extract until after I started making them, so I substituted vanilla. I didn't have problems with flat cookies--although I did use cold butter and added an extra 1/4 cup of flour. I think they would taste even better with almond extract so I plan to try these again.

Breadsticks with Parmesan Butter

Oh my gosh, these are sooo good! This was my second attempt at making breadsticks and these were way better than the first recipe I tried! I added a heaping TB of minced garlic and about a tsp. of Italian Seasoning for additional flavor. Then I brushed the butter/parm mixture on the breadsticks before baking them, instead of using it for dipping. The texture seriously was just like olive garden. I did have to add a lot more flour because the dough was so sticky, but I made sure not to add too much (I don't bake a lot of breads, but I think not adding too much flour is the key!) I also replaced half of the all-purpose flour with bread flour. The recipe makes a lot, so I flash-froze the rest in the freezer (before the second rise). So now they just have to thaw and rise and we'll have fresh breadsticks again! UPDATE: The frozen breadsticks are not as good as the fresh ones. They didn't rise as well and something was off about the texture. So next tim I'm just going to make enough breadsticks for that meal and a few leftovers.

Original Chex® Party Mix

Great snack! I added two cups of mixed nuts instead of the bagel chips (I used the deluxe nuts with no peanuts). And I added a 1/2 tsp. of cayenne pepper because we like things with a little kick. Then I cooked at 250 for 1 hour.

Broccoli Cheese Soup

I was disappointed with this recipe! I decided to follow as written and would describe the finished product in two words: Runny and Bland! But that is probably to be expected if you consider you're adding 10 cups of liquid to 1 lb. of processed cheese. It's still in the pot so I tried to fix it by adding the following: 1 cup of shredded cheddar cheese (I don't want to add more for fear that I end up tossing the whole thing!), 1 tsp chicken boullion, 1 tsp. garlic salt, and ground pepper. Hopefully this will at least make it edible. But dangit--I was so hopeful to find an alternative to the cream-based broccolli soup that we love! UPDATE: We just ate dinner--my kids picked out the broccoli, my husband said it was 'edible, but you could probably find canned stuff that tastes better.' One more comment, 2/3 cup of cornstarch is an insane amount for one batch of soup! I should have trusted my instincts, and listened to the reviewers on this one.

Fish Chowder II

My husband made this recipe this weekend and it was really, really good. And unlike most fish dishes, it tastes great re-heated! He did make some changes: Added 6 slices of cooked bacon bits, made a butter and flour roux to thicken, and added a little less than a pint of cream. And he added some cayenne to give it a little kick. My only complaint is my house still smells like fish, and he made this two nights ago!!
