Lemon Square Bars

There were so many suggested changes to this recipe that I decided to just make them as-is and see how they turned out! The only (minor) changes I made were to add the butter cold, and to add some lemon rind to the crust and filling. I thought they turned out great! And no need to double the filling!!

Chocolate Chocolate Chip Cookies I

Delicious! I did half butter and half butter-flavored crisco, then substituted 1/2 cup light brown sugar for white sugar, and pecans instead of walnuts. Cooked for exactly 10 minutes. They looked just like the picture and tasted oh so chocolately!

Golden Pork Chops

This is one of my favorite ways to cook pork chops. I sautee diced onion and fresh mushrooms in butter, then sear the chops in the same pan (the key is to get the pan hot (med high) so you just brown the chops, and don't cook them). I then covered the dish in foil and cooked for 30 min. @ 350 and 30 min @ 375. I have tried the method of cooking on the stove top with a deep pan, but my pork chops always come out dry that way. I think you need the indirect heat to keep them moist.

Savory Crescent Chicken

My family really liked these. I did have a problem putting them together--the crescent rolls seemed to separate. So I kinda just rolled it into a roll and pinched the sides. Served with rice and chicken gravy. Great recipe for leftover chicken!

Fruit Pizza I

This desert got mixed reviews. I didn't like it. The crust was too sweet and greasy. I would have preferred a crust more tart-like, I guess. But my husband and some of the kids enjoyed it. I made it on a 9x13 cookie pan and layered the fruit to look like an American flag. It looked cute, but I'll be looking for a new crust recipe.

Slow Cooker Beef Stew I

We thought this was really good--the meat was soo tender. The only change I made was to brown the stew meat in oil (seasoned w/salt and pepper) first. And I didn't have any celery or carrots. I served with corn on the cobb and biscuits.

Special Buttercream Frosting

Very good! Also known as Rick's Special Buttercream Frosting here. I used half butter for flavor. My only concern is that the frosting has cracked a bit where I put the toothpicks to keep the plastic wrap from touching. Hopefully I can smooth it out a bit before the party tomorrow. But it does taste great--the heavy cream makes it creamier (go figure!) than store bought frosting, or bakery cakes.

Cinnamon-Topped Rhubarb Muffins

'Tis the season for rhubarb! These muffins were so moist and delicious! They did appear to sink a bit, but it was actually the topping that had melted into the muffin. I liked it because there was a gooey surprise in the middle. Not a strong rhubarb flavor, but so sweet, moist and delicious!

Fresh Rhubarb Pie

So simple yet so delicious! Used a store-bought crust. My only change was to add 1/2 tsp. of cinnamon to the flour mixture and to brush top crust with egg and sprinkle with cinnamon sugar. Will definitely make again and again!

Fantastic Black Bean Chili

I liked this recipe okay--followed it exact. Definitely not a sweeter chili--I may add more tomatoes next time. Got mixed reviews from the kids--one liked it, the other not so much. But still good and healthly--although not so much considering we added fritos, cheese and sour cream!

Roast Sticky Chicken-Rotisserie Style

Loved this recipe! So easy and delicious... the chicken fell off the bones like good ribs! I marinated the rub over-night and added some garlic with the onion. I also put some potatoes in foil and threw them in as well (they needed the entire time since the oven was only at 250). My only regret is that I didn't make two chickens!!

Snow Cone Syrup II

Yummy! My daughter got a snow cone machine for her B-Day and wanted to make one right away. Of course I didn't think to buy syrup so I threw this recipe together and the kids loved it! Now I'm going to buy some of those plastic syrup bottles and keep a few different flavors in the fridge all summer long!

The Best Rolled Sugar Cookies

My go-to recipe for Sugar Cookies! My only comment is don't forget to add the salt! I forgot the salt and instead of incorporating the salt after the dough had chilled, I skipped it assuming all would be okay since I had used salted butter. BIG MISTAKE!

Shrimp Fettuccine Alfredo

We thought this was pretty good. I did have a problem with the sauce separating--but that could be because I didn't add the parm cheese 1 TB at a time(?). I halved the pasta and still didn't seem to have enough sauce. Oh, and I added some pre-cooked broccoli, and I removed the shrimp after I sauted it in the garlic butter so it wouldn't over-cook.

Drop Biscuits and Gravy

Yumm! I was just looking for a gravy recipe b/c I have store bought biscuits, but I decided to try them both. Especially since the store-bought ones are $2.50 a bag these days! I thought it was a good meal--I don't know that I would eat the biscuits without gravy or lots of butter & jelly. But overall not bad. I doubled everything for my family of 4. It seems we have lots of biscuits leftover compared to the gravy.

Birds' Nests

These are pretty good. I added some marshmellows to help them stick as well. I found the peanut butter to be too over-powering, and I like green nests. So I'll probably try a different recipe next time, and hand most of these out to the neighbors.

Soft Chocolate Chip Cookies II

These cookies are good--I like the 1/2 shortening 1/2 butter so you get back texture and flavor... But, I think I should have added another 1/2 cup of flour to make them make cake-like and not so flat. I'm not sure if it's an elevation thing (I'm in Utah), but they come out better that way. UPDATE: I just made this cookies again as-is and was going to rate them with 'add more flour' comment. Apparently, I've already done that--I should have read my own review!

Oatmeal Chocolate Chip Cookies I

These cookies are okay... The only changes I made were to use butter flavored crisco, add 1 tsp vanilla and 1 tsp cinnamon. It's a flatter, crispier cookie. Maybe should have cooked them for less time.
